Belgian Ale Kits (All Grain)

The term "Belgian ale" encompasses a wide variety of diverse and unique beers. There is no one set of characteristics, no neat divisions. Many Belgian beers even have their very own glasses; the brewers and drinkers would insist that the same beer served in a different glass wouldn't taste "right."

Belgian brewers aren't bound by the same traditions as their German and British counterparts. Fruit, spices, sugar—anything goes. Also, Belgian ales are often fermented at high temperatures (up to 86° F!) lending the beer phenolic and estery qualities considered undesirable in most other styles.

Our kits are true to eccentric form—you may want to purchase a commercial example before committing to brew five gallons. These beers are something of an acquired taste, but once you've acquired it...

*Phat Tyre Amber Ale - All Grain Kit

One of the most requested additions to our lineup of beer kits, this is not your typical amber ale—patterned after Belgian-style pale ales, which might be described as slightly less bitter, more fruity versions of English pale ales. Our Phat Tyre kit is copper-red with a fruity, slightly spicy aroma and flavor that comes from a combination of yeast and hops. A blend of caramel and Victory malts creates a sweet, toasty, bready character that lingers from the aroma through the finish. Make sure to stash a six-pack for yourself, because this one's a crowd pleaser.

*Patersbier - All Grain Kit

"Brouwerij'ed" on the left side of the Belgian town Malle solely for consumption by the reverent Cistercian brothers. This ale is not served or sold to the public, making it one of the rarest beers in the world. Made only from pilsner malt, hops, and yeast, the complexity that results from these simple ingredients is staggering: perfumey floral hops, ripe pear fruit, sour apple, spicy cloves, candied citrus and a slight biscuit character on the drying finish ... a monks' session beer.

Charlie Papazian once called Belgium "the Disneyland of beers." Whatever you do, Charlie, keep the Tripel away from Mickey. This beer is very high in gravity, alcohol, and body, and really needs some aging before it hits its peak. Literally, "white beer," this wheat beer originated near Louvain and got its name from its extremely pale, cloudy haze. Witbier was originally made by blending hopped wort with unhopped, bacterially infected wort, which gave it a tart, acidic taste. Fortunately, the Wyeast culture in this kit gives you all of the tartness with none of the bacteria. Light in color and extremely quenching, Witbier's unique flavor is also enhanced by coriander and bitter orange peel.

Patterned after some of Belgium's most unique and famous ales, our kit yields a beer that looks innocent in the glass but packs a delicious wallop. The secret is real Belgian candi, an easily fermentable sugar that ratchets up the beer's strength while keeping the body light and easy to drink. A pre-modern Belgian style that was made in household breweries during spring. Saisons are brewed hoppy and fairly strong in order to keep through the summer, but this kit is great at any time of year. A solid malt bill and a small addition of sweet caramel malt provide the basic structure. Hops give the beer a bracing bitterness and floral overtones. Wyeast Belgian Ardennes yeast brings it to life with striking spicy, peppery and earthy tartness. Serve in a wide-mouthed glass at cellar temperature to appreciate this kit's full flavor.

*Bière de Garde - All Grain Kit

Bière de Garde is a beer that has its origins in the northern region of France known as Nord-Pas de Calais. This style is intended to be cellared for many months, and is brewed relatively strong. Bronze in color, this beer has clean fermentation properties and a caramelly profile from a longer-than-usual boil. Our Bière de Garde kit is intended to be fermented 'steam style', by a lager yeast fermented at warmer ale temperatures. To enhance the cleanliness, this beer should be cold-conditioned in the bottle for two months before serving.

It's got the grain load of a strong Belgian ale but with a large proportion of wheat malt (the all-grain version also includes flaked oats) and Witbier spices and yeast. *Dawson's Kriek - All Grain Kit

This recipe, a sour Belgian-style ale, comes from the brewing log of NB's Michael Dawson, homebrewer for 13 years and harborer of bacteria for probably a lot longer than that. The kit yields a medium-bodied wheat beer with a reddish-brown color, cherry-pie aroma, and a tart, acidic bite that comes from a combination of real cherries (in puree form) and cultured bacteria. While young, the sour character of this beer will be subdued and the cherries more pronounced, but sourness will increase with age.
