Impaling your senses with complex flavors, Bloodthirsty Saison is a remix of the perennially classic Saison style. A savage dose of blood orange puree adds additional fierce citrus character to complement the estery, spicy and peppery tones spawned by the traditional Saison yeast strain. The result is a fantastically rustic ale featuring a pristine deep golden color, a ferociously brilliant white head, and an unrelenting dry finish.
Aroma Spicy aromas of pepper and low-moderate clove. Fruity esters of citrus fruits and pronounced blood orange. Appearance Pale orange color with glints of red hues. Moderate haze. Dense, rocky persistent head that laces down the side of the glass. Flavor Complex notes of peppery spice and moderate orange citrus balanced with a soft malt character with moderate grainy flavors. Mild bitterness and low hop flavor help to accentuate the distinctive flavor of blood orange. Very dry finish. Mouthfeel Medium-light body with no alcohol warmth. High carbonation effervescence. Overall Impression A pale, highly drinkable moderate strength saison. The very dry finish lends the spotlight to the background flavors of blood orange.

Browse 1 question Browse 1 question and 1 answerI am trying to decide whether to dump the blood orange puree in the primary fermenter at the 2 week point, or rack on top of the puree in a secondary fermentor. What do you think? Also, is the puree put in strictly on a time basis at two weeks, or when the specific gravity has stabilized?BEST ANSWER: I would rack the beer on top of the puree in secondary once you have reached a stable gravity.
