No Bentonite?
I understand that the cider kit has been reformulated, no longer requiring bentonite to be used. The included kit instructions & instructions online do not reflect this. Instead of not including the bentonite, I received an extra Lalvin EC-1118 wine yeast packet in addition to the Red Star Côte des Blancs yeast packet????

There have been some changes in the cider kits. So, you can skip the bentonite stage, sorry the instructions were outdated but that is the only major change. The yeast packet EC-1118 is a spare, or view it as a free sample. The manufacturer started including those without telling us and we like it better with the alternative yeast that we include. EC-1118 is a great tool for restarting a stuck fermentation so I would hang onto it for that and go with the much tastier cote des blanc strain. Let us know if we can help.

My batch has been in primary fermentation for almost 3 days, but I have seen very little activity in the airlock (meaning, I haven't seen a single bubble but there's a bit less water than before). Thinking through potential problems: It's only a 1gal batch but I'm using the 5gal BigMouth Bubbler since it's what I had ��� could that be it? I ordered 2 different kits when this came in, the yeast I sprinkled on the top was Safcider, was there another I was supposed to use? I've been careful not to aerate it at all, but does it need to be agitated to get things going? Or, are there signs of fermentation I should be looking for beyond airlock activity? Thanks!

BEST ANSWER: Signs of foaming, though a 1 gallon kit does not always foam up visibly. The best thing is a hydrometer, but as long as the liquid was at the right temperature, the yeast are doing their job and you have nothing to worry about. Since the vessel is 5 times larger, I am not surprised there is no air lock activity.
