A multiple gold medal winner at the Colorado State Fair, this decadent vanilla porter is sure to raise eyebrows. Most vanilla beer recipes use one or two vanilla beans; this one uses five and has the base recipe to back them up. A rich, smooth porter with hints of rum and molasses behind a coffee-like roasted character, then infused with fragrant vanilla. The beans used in this kit are a blend of Madagascar and Tahitian that provide deep, sweet flavor. The final pint emanates a heady vanilla perfume and makes for both a wonderful after-dinner drink or the ultimate ice cream float.

Dry Dock Brewing Company of Aurora CO is one of the hottest up and coming breweries in the US. In the 6 years that it has been open, it has racked up more than a dozen World Beer Cup and Great American Beer Festival medals, including Small Brewing Company of the Year. But to try one of their amazing brews you’d have to live in the tiny section of Colorado they cater to. Good thing for the rest of us Dry Dock has worked closely with Northern Brewer to develop these Pro-Series beer kits. We’ve sourced the same ingredients and kept all the recipe particulars the same, just scaled down to your homebrewery. Enjoy!

Let it mellow
Soaked the beans in a cup of bourbon for three weeks then added both in the last week of secondary. The bourbon bite was a little strong at first, but after a month in the keg it mellowed out. Just compared it next to a local brewery's vanilla porter and all my co-workers said they wish it was on tap instead.

Great seasonal beer, but could be year-round
I made this in January 2015 after getting hooked on a semi-major beer company's vanilla porter on tap at a local pub. I soaked the vanilla beans in bourbon as suggested, and added them (beans and bourbon) to the secondary and on to the keg. Added 3 TBSP of vanilla extract, but suggest adding only 0.5-1.0 TBSP. Only 4.9% ABV despite using a yeast starter and 2 weeks each in primary and secondary. I really, really like this beer, and am still enjoying it through the warm spring weather.

How many vanilla beans are used and much bourbon?

BEST ANSWER: There is a half ounce of vanilla beans included with the kit

which usually works out to two beans. There are no oak cubes or bourbon included

but you could certainly add some.
