My use of the product is in bread baking. For me it acccomplishes desirable affects for color, crust texture, flavor, and aroma. It has no detectible affect on yeast action as it is apparently a non diastatic enzyme type malt. That's fine; the flour mills add adequate diastatic type to their products anyhow.
