Realy Nice!
When I am making Pre-Prohibition Lagers I love using flaked maize. Color, a touch of sweetness, it just makes the lagers "better"... I wish that I could be more clinical, it gives them an extra something that that people like the most!

James L on Mar 2, 2017
BEST ANSWER: I used the flaked maize for a wine-making recipe, as an ingredient to simulate the taste of raspberry brandy. The recipe did not say to grind it. This is just my opinion but I suspect that the flaked texture of the maize provides sufficient surface area for it to interact.

BEST ANSWER: Flaked grains last much longer and since they are never crushed you can treat them just like whole grains. Best used within one year of ordering. Cheers!
