Once upon a time a poor homebrewer was lamenting the lack of time that the modern world allowed him for his hobby. He had the ingredients for a batch of Tripel and a batch of IPA, but the demands of home and work life were such that he had no opportunity to brew them, and so he cried himself to sleep. While he slept, a collective of Ardennes Forest Beer Gnomes (Houblonmonstres, in Flemish) came into his house and took pity on the poor homebrewer. They decided they'd brew his beer for him. Unfortunately, the Gnomes were already three sheets when they broke into his home, and so they combined the ingredients for the two batches. This recipe is the result of their drunken meddling: an elegant and pale strong abbey ale carpet-bombed with American and continental hops. You're going to have to do the brewing yourself, though.

Don't let the combination scare you away from this one!!!
Not sure why people are giving bad reviews to this beer for mistakes they made (ie, not noticing the grain wasn't crushed, not noticing the no dry yeast) This is an incredible beer! Everyone I give it to loves it. I wanted to try a combo of my two favorite beer styles though I was afraid the extra aroma would drown out the complexity of the Belgian yeast but that didn't happen at all. It really turns out to be a slightly more bitter Tripel. You get a nice bitter IPA flavor with a Tripel aroma. Finish is silky smooth with all the spicy, candy sweetness you would expect from a Tripel. Delicious beer!!!

Review update
I had another go at this one. This time, I ordered crushed grain!!! and brewed by instructions. Because my wife likes things a little more hoppy, I dry hopped with 2 oz of Centennial hops. This beer is incredible. I got 6 gallons at 9.6% abv, am left with a nicely hoppy and VERY full tasting beer.I will definitely make this one again... try the extra hopping.

Oh, Mah, Gah! This Beer is Incredible!
This beer is incredibly crisp, clear, citrusy and refreshing, with just a hint of spiciness. The head is spritzy, rather than foamy. Even my wife likes this beer, and she is not a beer fan. This is on the "Brew Again" list.But be careful! The ABV sneaks up on you!

Crush that grain!
I would dearly like to review this further, but unfortunately I can't. It took 4 hours of attempted brewing, a disappointing specific gravity of 1.025, and a little bit of soul-searching before I recognized that they had sent me unmilled grain.The default setting when ordering on the Internet for virtually all of the recipes is that they send milled grain. I got lax, did not check, and I now see that the default setting for this particular brew is to send unmilled grain.I can assure you that brewing with unmilled grain does not work...the entire gravity obtained was from the 2# of sugar augmentation.Though I spoke to Charles after discovering my error, they have not yet corrected the default setting.Northern kindly sent me another recipe, but it certainly was a waste of 4 hours.

Thanks for bringing this up Mark! You want to avoid having liquid yeast in transit over the weekend at least

and if in a warm climate shipping the yeast might no be advisable. You could get by T-58 as a dry yeast

but the brewer of this beer feels the ardennes is essential to its character. NB of course guarantees all our kits. Please contact a brew master if you need advice or help

especially prior to ordering. Looks like you are all set on this brew
