It produces low or no detectable levels of diacetyl. May also be used to produce quick-conditioning pseudo-lager beers and ferments well at cold 55-60°F range. This powdery strain results in yeast that remain in suspension post fermentation and requires filtration or additional settling time to produce bright beers. However, if you lack the equipment to brew a true lager, the Kolsch strain is a fantastic alternative for lager-like recipes.

They're really hungry !
I thought I'd try out this new yeast, and man was I glad I did !! Even with 150,000,000,000 yeast cells contained in the packet, I created more yeast in my stir pot. Five days later they finally stopped eating !! I never had a yeast last that long, maybe 2 1/2 days at most. My Kolsch is still lagering (another 2 weeks) and I can't wait to try it out. I'll get back and let you know.

At what temperature should I be keeping my primary for this strain of yeast?

BEST ANSWER: First off, I propagated my Omega yeast for 3 days creating an additional 150 billion yeast cells for my Kolsch. My home temperature (in the kitchen) is set usually around 70*. I always wrap my primary with bath towels and that temperature usually adds another 2-4 degrees. After I aerated the wort, I pitched the yeast and it gobbled up the sugar for 5 full days !!!! If I can help it I won't buy any other yeast , Omega has my business. Hope that helps.
