A coast-to-coast blend of a saison strain from a famous Northeast U.S. brewery and a Brettanomyces strain from a Northwest U.S. brewery. The blend results in a fast developing fruity and funky farmhouse ale. Tolerant to 10% ABV. This is an Omega Yeast proprietary blend you will not find from other labs.

*NOTE:*During summer months, we include complimentary ice packs with all liquid yeast orders. However, it is difficult to guarantee that the ice packs will stay frozen given transit times and particularly hot temperatures. For this reason, we recommend ordering dry yeast during summer months.

VERY FUNKY!!

I used this yeast for a rye saison. Fermentation was never especially vigorous. I bottled it after 2 weeks using corn sugar to prime. After 2 weeks in bottles the beer had nice carbonation, fine bubbles and good head. But I do not like the taste. I like a little funk but this is too much for my taste.

Pitched this culture into a low gravity spelt saison-type wort and fermented for 3 weeks before bottling. Vigorous fermentation for the first few days. Cleared pretty well before bottling. The beer had a wonderful dryness with a light earthy funk. Just what I expected. Highly recommend.
Note: I pitched a second rye (8% of grain bill) ale wort (OG 1.060) onto the yeast cake and fermented 4 weeks. Great result, but less funk this time.
