This complex, bold wine displays classic Cabernet structure. It's full-bodied and powerful, but never jammy or soft, like some Australian Cabs. Vanilla accents gorgeous cassis fruit and an appealing aroma of plump blackberries. Sweet vanilla and fresh violets with subtle notes of cherries and pepper spice and a tremendous backing of tannin and structure that will last both on the palate and in the cellar.

Somewhat sweet and fruity to start, but a really nice smooth and dry finish. I've made it several times, and it has always turned out great after about 7 or 8 months aged.

Great Cabernet Sauvignon

It's still a little young but we've opened a couple of bottles and really love the flavor. A lot of body and very bold, just like a Cabernet Sauvignon should taste like.

One to save (?) and appreciate.

Most wine-lovers have 2 reactions when you mention Australian reds. The first, predictably, is a slight grimace at the low cost, low end, barely drinkables marketed to the masses. The second, more akin to wine fanciers, is of the big full bodied fruit and accompanying aftertaste of the classic hermitages and cabernets, for which Australia is well known. This Australian cabernet is different, but in a very pleasant way. One of my friends said it best....."in a red wine, my wife likes smooth. I like character. I think that you have both in this wine." There is no doubt that you have to work hard at degassing with this wine but the results are quite satisfying. Well, maybe I do not know how good this wine could really be with age. It never seems to last very long on the rack. Go figure!
