It smells amazing
I am so excited about this wine. We are in the clearing stage right now and it smells amazing. My only complaint is that it is only 3 gallons. I want more of this wine. :)

I am really bummed that this is only a 3 gallon kit. I would also like to suggest that you put the size of the kit in the title somewhere. I read that all kits were 6 gallons unless specified and thought it would be in the description somewhere. That is my mistake. My question is, will it hurt the wine if I make it in a 5 or 6 gallon carboy? I do not have a 3 gallon carboy and I don't really want to buy one for just one kit.

BEST ANSWER: Thanks for the question and suggestions. I've passed those along. You can make the kit and use a 5 or 6 gallon carboy as the secondary, but you would want to get it in the carboy while the wine is still fermenting, and then stick to the timing recommendations very closely...if it sat in the carboy any longer you could see negatives like darkening and off flavors. Of course, ideally you use a 3 gallon carboy. I could offer free shipping on a glass carboy if you wanted to get one. Just call in and reference this email. but it would work OK using the larger carboy. Cheers!
