After pitching my yeast, a few hours later I noticed that some of the beer erupted and even filled the stopper. Also, there is yeast at the top of the gallon bottle (I am using the Northern Brewer 1 gallon kit). Is this normal? Did I ruin the beer?

Best Answer: This is normal and indicates an active yeast culture. The foam created is referred to as krausen and is made of proteins from the yeast and wort. If too much krausen forms and begins to fill the airlock, this is referred to as blow-off. To manage blow-off you can change to a blow-off assembly which will allow an easier path for the krasuen to escape, or closely monitor the airlock and periodically clean it to keep it free of any potential clogs.
