Brown Ales can often be boring and lifeless. Not this one. This came with my 5-gallon brewing kit. Despite being an extract, you really taste the maltiness. It has a heavier body for a brown which feels nice on the tongue. It also has flavors of caramel and light coffee.

I used the Danstar that came with it. It was sufficient for the brew without a starter. I did need to use a blow off tube for a day, but it settled nicely after. I did two weeks in primary, 2 in secondary, two in bottle before initial opening. I then left the bottles at cellar temperatures and found the best flavor balance around 2 months.

I brewed this ale following the instructions. It's an easy and FUN beer to create. After bottle conditioning for two weeks, it tasted great. I've just popped the top on one after 9 months and the flavors are really coming through!!! It's now an awesome beer. Nice caramel malty flavor kinda rum-raison coming out at the end. Slobber is a great flavor beer. The grain flavors and mild hop finish carry through very well. Great body and heady pour. Will put this in my brew rotation for sure. Made me a fan of brown ale. I think this is my 4th brew from NB and I highly recommend it! I don't normally go for brown ales, but the reviews changed my mind on this one. I'm sure glad they did! I let it go 2 weeks in the primary, 4 weeks in the secondary and kegged it. It's actually getting better with age!

Looks like I am reviewer number 300 on this kit. Today I popped open my first bottle. This stuff is amazing...even after one week in the bottle! From what I have read this one only gets better in time. I left in Primary for 3 weeks...racked to bottle bucket then bottled. OG was 1.056 and it finished at 1.020. This gave me a 4.73 ABV. Since my kegerator was empty I only let this one go ten days primary, 10 days secondary, 7 days carb and still darn good. This is a very sessionable beer that should appeal to non-beer snobs and craft beer drinkers alike. After I work my way through some more similar session brews I'll be running this one again. Chose this to go with my deluxe starter kit even though I typically don't drink brown ales. Very easy to brew, even for a complete newbie. Week and a half in primary, racked to secondary and left it another two weeks. Two weeks after bottling it was perfectly carbonated and decent flavor-wise. Wonderful brown ale with a nice complex hop character. I brewed the extract kit and it is excellent! No wateriness, not overly sweet and the hop additions work perfectly with the various malt flavors. I tried it green at 2-weeks while racking to the secondary, again at 4 weeks when bottling and once more at 5 weeks. Each time, the taste was better blended and the character more well rounded. This kit was free (promotional offer) with the purchase of a new keg. Having recently moved to AG brewing, I probably wouldn't have opted for the extract kit, but it was great nonetheless. The best part about brew day was adding the steeping grains. Right away, I knew this brew was legit as soon as the smell of chocolate and coffee met my olfactory nerve! After a week in the keg, this brew is just starting to hit it's peek. With a low ABV, this makes for a great session beer. Can't wait to try the AG version. (Posted on 2/3/14)

This was I think the fourth batch I've made from a NB kit. I'm happy with the flavor, color and texture, but I wanted to sound off and advise others that you definitely need to use the blowoff hose with this kit. I didn't need that on the prior NB kits I'd done, so I ignorned it here to my detriment. In less than a day even with the six gallon carboy the airlock was blasted out and I had wort working its way out the airlock. I quickly fixed up the blowoff hose and in the end no harm done (had the first bottled the other day and all's well), but a mess in the brewing room. My daughter bought me the deluxe starter kit. It came with this beer kit. My wife and I like to drink New Castle Brown. Guess thats why she got this beer kit. I have never brewed beer before. Since I like canning my deer and making pickles and salsa from my garden she thought I would probly like brewing my own beer.When cooking this on the stove the smell was great so I had to taste and the flavors where amazing.Today I bottled it all up and again had to taste it and the flavors really stand out in this brew. Going to let it condition for two weeks in the bottles. Again this brew tastes great and I will Be buying it again in the future. Now I'm tring my hand at some wine. This was my first beer to brew. Hard for me to rate it as I'm so new, but the process was easy enough to follow and the beer turned out great. Two tips that helped me. First, blowout is necessary, even on a 6 gal carboy. Initial fermentation was very vigorous. Second, I did not put it in secondary per the instructions. The "grain" bill for this delectable brew has a bit of every thing. Found a great brew to spread my knowledge to a friend who is interested in brewing. You have 3 hop additions, crushed gain, and 2 forms of extract. It covers all the bases. This brew always turns out fantasic as well which helps to keep up the motivation. Overall, for my first homebrew I was satisfied but my only complaint was that using all the priming sugar included in the kit WAY over carbonated my final product, no explosions, but definitely not where we want beer carb levels to be (almost chamagne levels). If I were to make this beer again I would probably only use 3/4s or less of the priming sugar. I am suprised no one else has had this issue, or maybe they did not use all the priming sugar. If anyone has any advice on how much they used or if they found their beer to be over carbed as well, let me know, I am curious. (Posted on 1/11/14)

First let me state that I am not a fan of dark/stout beer, but I thought I would give this a try after reading the description of this beer. Following the provided recipe, every part of the process went smoothly. I agree with other posts that aging is key to improved flavor. However, if you are not a fan of dark/stout beer in general, you probably will not enjoy this beer as much as those who do. Friends that like dark/stout beers give this 4 stars, so am using their comments to base my rating. When considering this review, keep in mind that I don't care for Guinness either. I'm not one to hand out 5 star reviews, but this one deserves it. This was my first batch ever. I made many newbie mistakes along the way: pitched the yeast too warm, didn't control fermentation temps at all, bottled straight from the spigot on the bottling bucket (causing some oxidation, no doubt) and more. Regardless, this beer turned out great. All of my friends and family were impressed, and I enjoyed it thoroughly too (and I typically don't even like brown ales!). This recipe blew my mind. I got this with the deluxe starter kit. I held 11 days primary, 19 days secondary, and after 2 weeks of bottle conditioning it was delicious. One month after bottling though it was even better than Moose Drool, as several recipients of my beer told me.

This is the first beer I brewed and I did it in the 1 gallon batch. Well, it was such a hit, my wife requested a 5 gallon batch before we start working on baby number 2. I happily obliged. I would recommend this to anyone as it's easy to do for beginners but also has a lot of great tastes and flavors within.

It has had a pretty vigorous early fermentation and has finished in about 2 days both times. This remains the only beer I've had come out the airlock thus far. I don't know what has caused that but it did it both times.

I have brewed 10 different kits so far. This is the favorite for me and for most of our guests who have tried a variety. Probably won't be a hit for the IPA lovers, but for those who like a nice malt flavor, this is really a fine recipe. At just under 4% ABV, you can have several and still function. I found myself having only 1 beer at the restaurant since I could go home and enjoy the Caribou Slobber more. This kit came with my Deluxe kit and it is a very good beer only 5 weeks after the brew date, even with a few beginner's hiccups. I let it sit in the primary for 1 week, then the secondary for 2 weeks, and bottle conditioned for 2 weeks and this is a very pleasing brew. From what others have said this beer clearly improves with age, but I am having a hard time not drinking it all right away. My fermentation temperatures were a bit high, around 71 degrees ambient temperatures, meaning my actual fermentation temperature was quite high, especially for this strain. Even so, a great kit. I love to brew this beer later in the summer to have it on hand for the fall enjoyment. If you particularly like brown ales, I'd recomend this one as a year round brew. It is the best home brewed brown I've tried.

I used the Caribou Slobber for the first batch of beer I've ever brewed, and it turned out great - probably one of the best beers I've had. Smooth, tasty, not too bitter - 'course everyone's tastes are different.

I just watched the DVD provided with the kit, followed the provided recipe/instructions, used a two-stage fermentation, and it came out great. The hardest part was waiting for my "grand opening" party to taste the beer for the first time....

This was our first beer brew! So cool and fun to brew, super easy instructions. 1 week in the primary fermenter. First night was VERY active. Swirling, bubbling and we could barely keep water in the air lock! 2 weeks in the secondary. Left a lot of sediment at the bottom, and even had some floaters at the top that worried us a bit. 2 more weeks in bottles and VOILA! Carbonation was perfect, we did use the entire packet of priming sugar, rather than measuring it out. Beer is delicious! Usually, I am not a brown beer person, but it is very good. Notes of caramel and coffee come through strong. I'm not sure where everyone is getting "banana" from. Has a strong start, but finishes nicely and goes down easy. Caribou Slobber was my first brew. Not knowing anything about brewing beer I picked my first brew based on the name alone. I am glad I picked this one. It has a great dark look without being to overpowering. I thought Caribou Slobber sounded great and now i know it taste great. This is a very good beer. It keeps getting better the longer you let it settle. Once placed in the secondary I would recommend letting it sit for at least 3 weeks if not 4. I keg vice bottle. I've gotta reply cause the review below is completely wrong-- this brew has a complex taste, consisting of 2 different malts and 3 different timed hops. We've been brewing for 3 1/2 years, and this is one of the top 3-5 best we've made. My favorites are normally the Trappist ales, stouts, porters, and the Nut Brown Ale is our standard beer. I love the complexity of this beer-- very tasty and easy to drink! No idea of the ABV, but it seems somewhat strong. I normally like a maltier beer, but the hoppiness of this beer is growing on me. I was surprised with the product, but was skeptical at first. My first and second batches really started to mature in 6 weeks. I did not like the smell of the product as far a nose goes, but the taste is complex and has so much potential as the bottles mature. My friends love this brew and it is a hit. Preliminary Review - This is my first homebrew effort and I already know what I would do differently. Brewed this recipe in April (we still had snow for the ice bath), following the directions enclosed and using a ice/water bath to cool the wort. Followed by 3 weeks in the primary fermentor prior to bottling as per recipe directions. The beer is not very clear but does not have a lot of turbidity from suspended yeast - This has not changed through conditioning to date. Sampling a week after bottling yielded little carbonation and a lot of banana flavor. Waited a week and re-sampled - Malt flavors were starting to come forward and I could detect a little more of the hop finish. Split the remaining batch - conditioning half at 39 degrees and the remainder at fermentation temperature. After 2 weeks sampled the cold conditioned split. The banana smell is still there initially but the malt/hop flavor has continued to develop and is now the primary taste profile (still get a little banana on first taste). Will give this another month to develop on the cold side and two weeks on the warm side and re-taste. (Posted on 5/19/13)

I made a couple of the 1 gallon batches before I bought the 5 gallon kit. I really love this beer. The 5 gallon batch is a little more bitter than my 1 gallon batches, but still a great beer. I let it sit in the primary for a week and then another four weeks in the secondary. Turned out very clear. My next batch I may put in the bittering hops around 40-45 minutes to see if it helps smooth out the bitterness (I don't like much bitterness in my beers). I'll repeat. This is a great beer!!! As a novice brewer but fast learner, this was my first 5 gallon batch. I unfortunately made it with a cheap (but large capacity) 12$ pot that had great difficulty getting it up to boil. That aside, after a healthy 2 weeks for fermentation, letting it bottle condition for 2 months, then refrigerate for another month, this turned out AWESOME. The flavor changed so much between bottling and cold conditioning! It's still not my favorite beer, as I like pale ales and lagers, this is the top of my list for a dark ale. So drinkable. Weirdly enough, drink some of this, and then eat a chocolate cookie of some sort. I kid you not. It makes it even better. (Posted on 4/15/13)

Turned out great after all. After first bottle I declared it my favourite ale. Will do it again, now doing some lagers, I'm hooked. My first brew; got the Essential Kit for Christmas this past year and it came with the fermented drool of a large mammal.

Brewing day went off without a hitch, and was quite fun actually. I must admit I'm hooked to home brewing after just one run. I think I made the mistake of taking my fermentation lock out of the bucket twice because it wasn't bubbling. But I've come to learn that it was likely just a less than tight seal. I've drank two bottles already and there's been slight differences in each which I'm attributing to my impatience with the lock. No off flavors however, just some slight over carbonation. This was my first batch, received for Christmas with a Deluxe kit as a present. I followed the direction, but screwed up siphoning, ending up pouring into secondary, got beer everywhere, made all sorts of mistakes. Even so, I was anxious to try and opened bottles early after bottling. Shockingly good, even green. Truly terrrific and got better with age, though to be honest, I was caught up in my success and emptied both cases in 2 weeks so not much made it to "aged". Definitely a favorite even though I've brewed several since. Bought another and have it going now. Not a typical brown ale, very malty but with a distinct more american hoppiness in the finish. I'm not a Brown Ale fan so when I received this 5 gallon kit for Christmas I assumed I'd be giving it all away. Well...you know what they say about assuming. Caribou Slobber is hopped enough to leave a sharp hop bitterness on the back of your tongue like bitter chocolate. I don't know enough about the finer aspects of beer tasting to be any more detailed than that but I can say with certainty that Caribou Slobber is GOOD BEER !!! This was my first Home Brew and as such I set the bar very low for myself. I used the default yeast(dry) because I didn't know enough to make a educated choice. I thought I would be happy with something that tasted more like beer than turpentine. Wow, was I surpassed! I used the full range of the fermentation schedule and a yeast starter. Beer was well carbed and tasted great after two weeks in the bottle. Gave away probably 6 or 8 and everyone to-a-man raved about it. Even had a couple "best brown ale I ever had" comments. This was my 5th or 6th kit and had been wanting to brew for long time. Wish I hadn't waited so long! Brewed on 01 Dec and bottled on 29 Dec. First one I tried two weeks later was good, a bit over-carbonated but could tell the flavors hadn't fully come together. 3 weeks after bottling: the flavor profile was more robust and could really taste the caramel. One month after bottling and this has to be one of THE best brown ales I've ever had. Rich, creamy head and the flavors jump out and it's so smooth. The carbonation seemed to have mellowed a bit. I brewed this and the Irish Red on the same schedule. No one cares about the Red, they want just want more of the Caribou. (Posted on 2/4/13)

I had been out of brewing for a number of years and picked up this kit. I substituted WLP002 for the yeast (apparently that’s what’s used in the real deal). I’ve been extremely happy with the results. After about two weeks in the bottle I was a little disappointed with the head retention and flavor. This is an excellent beer, but it should be at least an 8 week process rather than the 6 called for in the recipe. I have brewed it twice, and been disappointed with its overwhelming bitterness and watered down flavor when sampling after 6 weeks. After letting it set, it really smooths out and is quite delicious.

I would recommend giving it 4 weeks in the secondary to allow it to mellow out a bit more, and perhaps even 3 in the bottle afterward. (Posted on 12/30/12)

I started with 1 batch of Mr. Beer and jumped up immediately to a NB Deluxe kit and brewed Caribou Slobber as my first 5 gal batch. Did a starter of Wyeast and added 1lb of light brown sugar at flameout. 12 days in primary, then 12 days in secondary at 66F. (I needed my primary for my next batch) 3 weeks bottle conditioned and sampled one. Nicely carbed, good lacing, good color and really great taste. I little hoppier than I expected but not over-powering. I'm very pleased with the results and as others have said, It will get better with age. Preface: This was my first "large scale" home brewing attempt.

As such, I was probably rushed through some of the fermentation stages a bit too quickly. I did one week in the primary and two weeks in a secondary, then straight to keg. I poured my first glass today and it's not bad. Nothing I'd write home about, but drinkable nonetheless.

Word of Caution: the recipe directions state that you should place your fermenter somewhere dark, warm and quiet after pitching your yeast. Since then I discovered that it should probably not be "warm". Rather you should look at the yeast you are using and base the temperature on that. As a result I had a very aggressive and fast fermentation. The entire process was done within 48 hours of pitching. (Posted on 12/9/12)

This was my first home brew kit. The malt leaked out some making a sticky mess, but not enough was missing to need to be replaced. I just watched the video online to make it, easy enough. It was quite bitter after 2 weeks in the bottle, but at week 4 it was far better. Since then I have made a pumpkin porter and can only hope it comes out half as good as this. It turned out darker than the picture. I really thought I had messed up. It was watered down and bitter at week one and OK at week two. By week three, it was delicious. It has been in the bottle six weeks now and my wife is asking when I am going to make another batch. (She is not a fan of darker beer.) I only did the primary at three weeks. I started brewing extract kits a few years back and this was the first one I tried. It turned out awesome, very easy to brew, with a delicious resulting brown ale that has enough hoppiness to keep me happy. I have since brewed numerous other kits, however I keep coming back to the Caribou Slobber, I am about to brew my 4th batch of it. I love it and so do all my friends, highly recommended! I got this as the include with my kit from NB. Me and a neighbor brewed it up. He directed/helped stir, etc; but letting me make my own mistakes. And boy did I make them! Let the speciality grains steep too long, first hop load put in before it came back up to a boil, fermented warmer than its recommended range, exposed to light. And you know what? It Still Tastes Good! If you're considering this as part of the kit, it seems to be forgiving of mistakes like I made. If you are a more experienced brewer or make fewer mistakes, I am betting that this would come out Great.

I cannot believe this beer is from an extract kit, it is that good. It tastes more like Surly Bender than Moose Drool to me, and in no way is that a bad thing. The chocolate and coffee flavors are there, but it is remarkably smooth and drinkable. The most sessionable complex beer I have ever tasted - homebrew or commercial.

After two weeks in the bottle the taste is outstanding, and the carbonation is fantastic. Great, thick head with lacing all the way down. A little bitter on the aftertaste initially, but further aging mellows it out.

I'm tempted to just brew this kit over and over, it's that good. And I am an admitted hop-head so this is typically not my style, but it is damn good beer.

Amazing beer! The longer it sits, the better it gets! I kept it in the primary until all bubbling siezed (3 weeks)and the secondary for another three. Even in the secondary there were multiple changes as it went to clear, then small bubble pockets would gather and disappear on top over and over. Two weeks in the bottle and ready to drink. This beer is great for the seasoned picky beer snob and the training beer guy as well. Nutty, chocolatey, coffee, and malty all in one. Brewing third kit. First with WLP-002 - Keg. Second Wyeast 1332 - bottle. Two weeks primary. 4 weeks secondary. Ferm 65-68 F. Both beers are at the top of my list. Really prefer the WLP-002 slobber. I enjoy all types of beer, but certainly prefer a darker ale or a stout/porter.
Caribou Slobber seems to encompass everything I like about beers. It tastes great, smells great, looks great and was easy to brew. Everyone loves it. I used the extract kit, dry yeast, 3 weeks primary, no secondary. After 2 weeks in bottles, it was drinkable. However, it keeps getting better and better. Will make this again for sure. My very 1st batch of home brew. I was a little nevous since it fermented in under 24 hrs. 2 Weeks in priomary...5 days secondary. Great color and clarity, and the flavors that come out are incredible! i will be doing another batch as soon as my fermeter is empty!

I brewed this twice...back to back...one bottled and one kegged. I am not a big brown ale fan but this one is exactly what everyone else says here. Let it age and it turns out nice. No wonder this beer got such high ratings from so many people. It is one of the best homebrews I have ever made. On second thought, the best! It has so much character that I can't believe I made it. Used 6 oz priming sugar, and I have great carbonation. Those of you who are from Upstate NY or close may be familiar with Lake Placid UBU Ale. This is better. I have it on tap. We have made about 20 beers to date, but this is my favorite! It's malty, roasty and chocolatey without feeling heavy. It has a nice body, and goes down easy. This was my first kit ever. It came out very good, the girlfriend loved it. If I did it again I would use Safale US-05 instead of Windsor to get better attenuation and a drier finish. It also was a little under-carbed (probably my fault for not using enough priming sugar).

Brewed this in November with Wyeast 1332. Fermented at 65F for two weeks in primary and two weeks secondary. Bottled (70F) two weeks and 50F for 4 weeks. Beer was very clear,maltyand nicely carbonated. Requires patience. Last bottles consumed in late May and it still holds up very well.

Even though this was my first, it is hands down my new favorite. The kit made about 2 cases just as they said, now i'm down to the final six pack and ready to start brewing again! The name led me to believe it was a clone of moose drool, but the side by side comparison is like apples to oranges. The caramel flavors really come through for me with a hint of coffee and finished with slightly bitter hops. I added a little extra table sugar when bottling and I think that was a good call, it really seems to make it crisp and refreshing when poured into an ice cold glass.
The only problem is that I can't find anything close enough in the stores to enjoy while I wait for my next batch!!! !!!!! (Posted on 5/18/12)

This is my first specialty grain batch, and it was quite easy to accomplish. Lots of roasty notes in the brew day. I did 2 weeks in primary, 3 in secondary and let it bottle condition for 5 days before trying one. I figured it would be low on the carb and still green, but it was quite a surprize. It's been about a month now, and most of it is gone between friends and myself. It is getting better as the weeks progress, and I will definately be brewing this one again.

Had to try CS since I had its namesake in Wyoming years ago. Not disappointed in the taste but didn't seem to carbonate well. Primary fermenter four weeks at 61 degrees, bottle conditioned at same temp for two weeks. Hints of chocolate, coffee, and caramel. Wonderful dark brown color to it. My buddy says it is the best of the three I've brewed. I need to do this one again but see if having the temp around 68 will help the carbonation. (Posted on 4/18/12)

Created a starter from Wyeast #1332 Northwest Ale Yeast about 36 hours before pitching. Followed instructions provided by NB except that I added 1 tsp of irish moss to the boil during the last 15 min. Fermentation temp was in the mid 70's for primary fermentation, low 70's for secondary (no control). Used corn sugar to prime and conditioned in 16 oz bottles.

I wasn't particularly impressed after 2 weeks of bottle conditioning. Had an "off" flavor that wasn't working for me (difficult to identify). Sat on the shelf during Lent, but decided to try one on Easter. What a difference!!! First one tasted like 3 more! Very smooth, full-bodied, and infinately drinkable. Great balance of malt and hop. Full bodied without being too sweet (this coming from an admitted hop-head). Definitely a worthwhile recipe! (Posted on 4/12/12)

This was my first home brew and I can't believe it came out so good. Blew away all the commercial beers in the fridge. Now I'm hooked. It gets better with time. A few weeks after bottling I was sorry I had already drank most of my batch because the Caribou just keeps getting better. I've been brewing for 5 years, all grain, extract, partial, mr beer, wine...you name it, I've brewed it. This little extract kit was the best beer I've ever made. I was absolutely shocked at the complexity of this beer. It was a whirling dervish of chocolate, caramel, and hop flavor. I added a pound of cane sugar to bump the OG with no adverse effects. I was a little worried because it fermented sooooo slow. Almost 3 weeks to complete primary with the wyeast at room temp! If that happens to you, don't worry, you will be rewarded for your patience. Just sampled my latest batch. 2 weeks in primary, 2 weeks in the secondary and 4 weeks bottled conditioned. This was the 4th time I have brewed this and this is the best one yet. Head formation is always lite on this brew, but who really cares, but this batch came out with a head that had very small bubbles. I reminds me of the head on a Guieness with nitro. I made the all grain version. Typical 123 (1 week primary, 2 weeks secondary, 3 weeks in the Keg). It was ready to drink a couple of days before Thanksgiving and it went fast... A five gallon batch is not enough... So I now brew it 10 gallons at a time. I have never had a batch older than 12 weeks but I agree the closer I got to the 12 week mark the better it was!

I highly recommend this beer to anyone. It has a great taste to it and since it is a session beer, you can have more than one or two at a sitting. However, be careful because they will sneak up on you. I kegged the batch that I brewed and just ran out yesterday and will definitely be getting this kit again in the near future. What can I say about this kit that 92 other people haven't already said? I'm satisfied with the flavor of the finished beer. It's a smooth, easy-drinking beer that my friends also enjoy. I will make the all-grain version next time hoping for some additional grain flavors and better mouthfeel that you don't get with the extract kit. Not the best brown ale I've ever tried, but certainly not the worst. I would suggest splitting the batch between bottles and kegs for you keggers out there. That way you can see how the flavor profile changes as it ages. My cupboards were bare, so-to-speak, so I put the whole batch in a keg in order to have something to drink for the weekend. ...for a better brew, been brewing over a year, did this one in jan. after 6 weeks was unimpressed with it. was going to pour the rest down the drain! just found 2 more boxes of it, 5months later even my hubby loves it! what a difference time makes! this will stand above my local brewpubs best! i bet this would be awesome on nitro- like a smoother porter. highly recommended if you have the patience - brew and hold to serve for new years or superbowl party. I didn't make any changes to the indgredients list at all, but I didn't exactly follow Northern Brewer's instructions either. The first simple change I made was I brewed ths with Nottingham instead of the Windsor yeast. I also did not employ a secondary ferment on this one, I simply left it in the primary for about 3 1/2 weeks and then bottled. After about ten days of bottle aging it was delicious. It churned out a much better beer than their Nut Brown kit. The caribou slobber has a huge amount of flavor and sublteties in comparison. Very good and I will brew again. (Posted on 5/1/11)

have made about 11 batches, most of them need to bottle age several weeks before they are what i consider drinkable. Sampled this one after 1 week in the bottle, and it is very, very good. Nice very subtle hint of chocolate and coffee, it is malty but has enough hops to balance it. Thought it has a very nice overall flavor, and carbinates very well. It's hard to keep this one around, but everyone keeps asking for it, so what can I do? I've only brewed less than 10 times, and my third batch of Caribou Slobber is in the carboy right now. At this rate I'll have to brew this one ever other batch!

This beer is very good and well liked by those who tried it. I only have a few bottles left and I am sad. I will need to brew it again, but have too many others to brew in the near future. Perhaps this will comeback in the fall. One complaint, and this has nothing to do with the beer, but I filled a growler and it didn't carbonate at the level the bottles did. It was a growler with a lock and gasket, so I am surprised. It must be the growler, which sucks because they are $25 or so. Any this kit rocks and I highly recommend. Great color, crystal clear, good tan head. It looks great when poured. It even smells the part. However when you drink it....very weak. The only flavor it provides is literally on the front of your tongue. Nothing going on at the back of your mouth. Strange to say the least. Unique I guess. Not sure what that means. This was my first NB kit and I fermented way too warm (around 72+), but this beer is amazing! After 2 weeks in the bottle it tasted good, after 4 weeks in the bottle I can't get enough of it. I have converted all the Bud drinkers to craft beer after they try this and I myself (who was a big craft drinker) have gone all homebrew because the craft can't compare! My only problem with this beer is that it goes to fast and now I need more!
As far as taste, I get malty sweet, smokey, a bit hoppy, and lots of fun caramel, chocolate and coffee notes. The aftertaste leave your tongue craving more. But this beer now! (Posted on 3/31/11)

We gave this batch a new Moniker of "Countyline [hotdog vendor]" after having walked for endless hours in the woods trying to kill deer, only to end up thirsty as hell at The County Line w/ no deer or beer in sight. Every one of these delicious browns make me feel like I actually accomplished something instead of just being made a fool of by an 8-pointer.

It may look like a "nut brown" but this stuff slides down with ease. We had MASSIVE reactions during early fermentation with this stuff. Blow Off scag poured out of the top of the carboy and fermentor for 5 days straight.

In all fairness I have never had the beer this one is cloning. But with that said, either I just wanted something else out of a Brown Ale than most of the reviews or something went wrong in my brewing process. To me it turned out very light body, slightly sweet, and a good amount of hop bitterness (which I did enjoy). I didnt get any of the roasty or nutty notes I was looking for. Now its at the 2 months mark and has been bottled for about 4 weeks.

This is my 3rd NB extract kit, and I am very happy with the results. This was my first boil over and as I had to add extra water to the fermenter I was afraid that I had really messed it up. Two weeks conditioning the beer explodes with flavor as well as extremely well carbed. The is my first home brew that has to be poured down the side of the glass to prevent spillage. Aroma is excellent, tan head, my unsophisticated taste buds can't find the baking chocolate or the coffee, but it is very immature. I happy with how this beer turned out, except, the hops smell and initial taste is a little too high for me and my wife (we're not into very hoppy beers). Others that I've shared with the Caribou Slobber with were ok with the hops level and thought the beer was very good. It's a matter of taste, literally. I'll probably make this batch again, but remove about 10% of the hops from each of the 3 supplied packs before use. Also, the fermentation might be a little low. This has an excellent taste and really good after 6-8 weeks. Even though my fermentation period was a bit short (3 days) and stopped before all sugar was converted (I think I did not oxygenate been adequately before pitching dry yeast) and I had some bottle explosions, the beer was great. I just opened all the bottles in my five gallon bucket (they foamed up a lot) let the foam settle, and then transferred it to 2.5 gallon keg and re-pressurized. Awesome beer. (Posted on 2/26/11)

I have made this kit 4 times now for my wife--she can't get enough of the 'Bou Slobber. I'm not much of a brown ale fan and I really like this ale. I have racked to secondary for at least 4 weeks each time. I can't tell you if it gets better with age after that because the longest a keg has lasted has been 18 days--and we were on vacation for 7 of those!!!

I have never had the opportunity to try the beer this is based on, but if it is anything like this it is one damn good beer! The NB description to this beer is spot on and I am really impressed how good this came out. I just popped one of these open the other night and It is by far one of the most delicious beers I have tasted. I did a secondary ferm. and let it sit for about 5 months, I bottles a couple straight from the primary and they were good, kind of like a more hoppy Bass.

However, letting this beer sit was the best idea, I don't really know what to compare this beer to.It's so smooth and has one of the best tastes on the palate out of any beer I've previously brewed. This beer is definitely one of my new favorites and I will be brewing this again, I may do a double batch just to stock up on these. This was my first brew kit. I had ordered the American Wheat as my first two kits and, though the American Wheat would have been easier to begin with I think, I couldn't wait to try this beer.

I made it up as described: Two weeks in the primary, two weeks in secondary, and about a week and a half in the bottle before I broke down and tried it. It was delicious! I took several to a house warming party and they were gone instantly.

Just cracked a bottle after a week of conditioning, jotted down my tasting notes and logged on to write my review and the NB description almost reads like a copy of mine! I do think that the coffee is a more dominant component to the aromatic and taste profile though (not a bad thing). Rich, smooth as silk mouthfeel that's balanced by just the right hint of hops to keep this very drinkable rather than heavy. I just poured my first bottle of this, and man, this is great stuff. I doubled the specialty grains and had an OG of 1.066. Primed with Munton's Kreamy X, only took 1 week to carbonate. Since i doubled the grains it is darker and more like a porter in color and flavor, but the hop balance is perfect. Will definitely brew again, and this may become a standard in our house. This was my 5th batch that i have bought and brewed from NB and i have not been disappointed once. I brewed this kit without ever trying moose drool, Then as it was sitting in the fermenter bubbling away i walked into one of my local beer stores and there it was shinning like the holy grail... I went home crack it open and i have to say i was disappointed. but after mine was done i have to say mine is better!!!
Ended up putting a cup of brown sugar in this one at 55 minutes into the boil came in at 7.1%abv. Gave a few away and everyone has loved them.

Picked this kit up to try something a little more complex than an average amber ale. The grains for partial mash smelled wonderful, and added great character to the beer. This beer came together great, and is very good at 6 weeks. The picture here looks identical to what I have in my glass and the OD was right on. Just tapped the Caribou Slobber this week. We had a bottle of Moose Drool to compare directly and it was the consensus of the three brewers that the color and odor were exact , but the taste and mouthfeel of the Slobber was a little smoother than the Drool. We didi let the bottle beer breathe a little so to adjust the carbonation to the same as the keg, but it still have a little more sharpness than the homebrew. Defintiely one on the list to brew again. (Posted on 5/1/10)

Wow - my 1st Home brew in a long time... Why did I stop? Because my beer never tasted like this! I made this beer for my son's HS graduation and folks LOVED it. This beer turned out amazingly well. I added one cup of brown sugar to the boil at about 55 minutes in and that bumped up the alcohol a touch. After only 10 days conditioning it had a nice head and tasted great. (Posted on 4/14/10)

This was my first try at brewing....followed all the directions....when it was ready,I tryied it,and thought it was OK...not great....didnt really want to give any away because it wasnt anything to brag about.....now after sitting awhile in my basement,I notice it gets better with every bottle....Tastes great! I am a big fan of ales and this beer did not disappoint me. I love every drop of it. I'm drinking a glass of it right now. It give nice little chocolatey hints that are slightly noticeable. I am very pleased with the results and I will give it 5 Pints! If you're a fan of dark ales, this is a definite brewster. (Posted on 3/26/10)

I have never had the original, but the final result of this beer is simply awesome. I can drink this one as a session, has a good amount of hops with plenty of malt to support them. A bit darker than I expected, but that doesn't matter. (Posted on 3/15/10)
