Having gotten into homebrewing, I started wondering what else I could make at home. Cheese sounded fun, so I ordered one of these kits with the Farmhouse Cheddar and Cottage Cheese recipes.

I got through most of the instructions just fine, though it was a fair bit of work (significantly more than brewing an extract kit). But when it came time to press the water out of the cheese, everything quite literally fell apart.

The kit includes a round mold into which you put your curds (in cheesecloth). On top of that you place a plastic piston, and on top of this piston you add weight. You're supposed to gradually increase the weight, culminating in 50lbs for 12 hours. The instructions recommend stacking textbooks on top of the piston...I'd LOVE to see the manufacturer try this. It's completely ludicrous. First, how are you going to know off-hand how much a bunch of textbooks weigh? But worse than that, it is *IMPOSSIBLE* to keep the books from falling off the piston, because it fits somewhat loosely in the mold and is resting on top of a malleable blob of cheese...so almost immediately, your stack of books will start to list to one side and within a couple of minutes (at most) they'll fall, no matter how perfectly you try to balance them, because the curds give way underneath.

I tried everything I could think of to stabilize the books (and I'm an engineer). The only way to keep the books on the piston was to stand there holding them, and needless to say I didn't much feel like standing in my kitchen overnight. I also tried using some weight plates from my home gym instead of books, with no better results (and I wasn't about to let those fall and make dents in my floor).

So...in summary, if you're going to buy the starter kitk, choose the option that includes two soft cheeses (no press required for those). Absolutely do NOT buy any of the hard cheese kits unless you own or are planning to buy a cheese press (they're surprisingly pricey, though if you're handy there are plans out there to build your own). I'm giving this one star because I think the manufacturer is being willfully deceitful with these instructions; they ought to warn people that they need a cheese press, rather than pretending like this is possible without one.
