Fermented to completion, dry mead is delicate and more subtle than medium or sack mead. Becomes champagne-like if you carbonate it. Excellent as an aperitif. Kit includes Wyeast 4021 Champagne Yeast. OG: 1.080-1.083. Time to make: 3 months minimum.

NB Artisanal Mead Kits. Based on Ames Farm's amazing honey, these are simple, uncluttered traditional meads designed to let the honey shine through. Because the floral sources and composition of Ames Farm honey will change with the season and years, and are dependent on variables like hive placement and weather, every batch of these kits will be unique.

Each recipe is available in two sizes - three gallon or five gallon.

I am five months into this batch and I do not know how much longer it will last. I find myself during the day craving this drink. It is very subtle, a bit of a bite and great when it is chilled and carbonated. It is really good as a champagne.
Throw your regard to the wind and give it a go. I ordered two more batches of this goodness so that I can ferment it and then keg it and then drink it after my deployment. Come January, I'm a be rocking this mead! (Posted on 3/31/12)

I was dubious at first. I measured the bucket wrong and ended up adding an extra gallon of water which ended up bringing the alcohol down quite a bit.
I am five months into this mead and am drinking it regularly. I find myself during the day craving the dry crispness of this wonderful drink.
I have ordered two more kits of this so that I can ferment it and then keg it and let it sit for the six months of my deployment. Come January, I'm a rocking some mead, baby!

This mead is extremely dry, strong alcohol bite. Chilled it is almost tasteless, I prefer it at room temperature where you get a bit of the honey aroma. (Posted on 3/24/11)
