This recipe is a spinoff of our highly popular Nut Brown Ale kit that combines American malts, hops and ale yeast with honey. A well-balanced and intensely drinkable beer.

I mashed this a little higher at 156. I added the honey to the primary rather than flameout. Flameout honey may as well be sugar in my experience. I also used a 2nd generation washed WY1272 American Ale II yeast at 64F.Rating
This is smooth. Caramel comes through as does a nice amount of chocolate and a touch of coffee. I'm not getting much honey character, subtle. This is almost a desert beer. I could up end a glass easy. Serve it with cookies and ice cream. Don't let anybody taste it or it'll be gone.

Brewed on 3/19. Added oxygen to the wort and dumped on the fresh yeast cake of wyeast 1056 (from a cream ale). Fermentation at 66 degrees started within hours. Kegged on 4/6, served at 38 and the taste kept getting better with time.Rating

I've made about 6 batches of this so far, and the all grain version has alot more coffee/chocolate tones to it. Not a noticeable honey tone but very smooth. I've used the dry yeast as well as the 1056 and like the 1056 the best, but either will still turn out good. This beer probably has had the most compliments overall than any of the other styles. The brew and fermentation all went well. After a few weeks in the bottles the final product is very good. Slightly dark in color for an ale and the honey flavor is moderate and not overpowering. All in all I would absolutely make this beer again. (Posted on 3/20/10)Rating
