Imperial stouts were first brewed in England for export to the royal courts of the Russian Tsars. The Tsars are gone but the beer remains, the "War and Peace" of stouts. This kit yields a pitch black beer with tan head, resounding with burnt, bitter chocolate character, hops, and syrupy malt. A viscous, chewy body finishing with lots of roast grain and a warming alcohol note. A nice companion on a cold winter night or accompanying chocolate dessert. Recommended: 2-stage fermentation and yeast starter.

Brew this. At times, i get tired of Cascade hops showing up everywhere so I replaced the Cascade hops with Santiam hops and it came out so smooth and delicious. Give it a try. (Posted on 4/30/12)

I have been brewing for about two years now, somewhere in the neighborhood of 30 brews, and this is by far the best beer I have ever made. Easily on par with commercial examples that cost $7 for a bomber. My only recommendation would be to start another batch mid way through secondary fermentation so you don't run out. This is a fantastic beer. I used the dry yeast, primary for two weeks, secondary for 2 months and bottle conditioned for 2 months. It ties up your fermentors for awhile but it's a great beer if you have the patience. It has great mouth feel, taste and aroma. I agree with the other reviewer, if you're going to do a closed fermentation on this then use a blow off hose. (Posted on 1/10/11)

An outstanding kit, we got great remarks from our brew club on this one. Easy to brew and a fantastic product, we even converted some lite beer drinkers with this one. a Few thoughts:

Definetely use a blow off tube on this one, it goes nuts if you pitch right.
A big improvement after conditioning at cellar temps for at least a month.
Has a perfect balance of malt /hops.
