Consider the Northern English Brown Ale: drier, cleaner, less fruity and sweet, and slightly hoppier than their southern counterparts (like our Nut Brown Ale kit). These beers actually have quite a bit in common with ales from Scotland as well, but don't try to tell them that in Newcastle. This kit yields an easy-to-drink, easy-to-like ale with a clear, deep garnet color, light sweet malt and fruit flavors, undertones of burnt caramel, chocolate, and toffee in the finish.

Too spicy and hoppy Review by Garrett
I followed the directions without modifying anything since this was only the second kit I have made. I am a long time New Castle drinker and hoped this would turn out to be similiar. After about 8 weeks, 3 in the keg in the fridge, the beer is more hoppy and spicy than I would prefer. To me, is not like New Castle. Maybe there is some way to change this result in future cooks? Three weeks after bottling....excellent and looking forward to it improving with age. Of course I'm not sure how long they will last sitting and getting better, but this is nice for my first batch. i didnt thik i would like this beer at first because of its sweetness. the first drink is sweet and the second drink is awsome. my buddy is a huge New Castle fan and he likes this brew better than New Castle. this is no thin beer, it has a good body and mouthfeel. my biggest problem is that so many people like it that i am already almost out. Brewed as per the instructions;however, I add smoked wood chips soaked in JD Old number 7 prior to the second ferment. Left in second fermenter for 4 weeks, and 2 weeks in the bottle, excellent results. (Posted on 6/21/11)

Not nearly as good as I had hoped, maybe I should have used a different yeast (dried used) or used two stage fermentation. Even with the late addition of malt it is quite heavy , sweet and has an unusual finishing bite. I bottle, so maybe it would be better in a keg. The 80 shilling Scottish brew is a much cleaner and crisper beer. We enjoy it much more than this Nukey Brown. (Posted on 5/15/11)

20 days from brew to keg, and I thought this was among the worst batches I'd ever brewed. I know, that's a short time, but most beers are usually drinkable in a short time, but improve as I leave them in the fridge. None have done a complete turnaround in a few weeks like this one did. I'd expected a sweet brown, with enough hop flavor to make it interesting. At first, it had such an unbalanced, astringent quality that I almost didn't keep it. But, given another few weeks in the keg, it really mellowed out into a great session beer. In fact, some friends accustomed to only Bud Light & the like drank some, and loved it so much, begged me to teach them how to hombebrew. (Posted on 2/25/11)

Was never a huge fan of the original until i found it in cans; compared to the bottle, a totally different beer. This one to me is almost an homage of what Newcastle should be. Same laid back flavor profile but with a richer maltiness and cleaner finish than the commercial version. Did a head to head comparo with a self described 'Nukey fanatic and this one took the prize hands down. brewed and bottled as instructed and produced a fantastic beer. (Posted on 10/23/10)

My first HB batch. Really easy to make. Just be sanitary and you'll be alright. I primary ferm'ed for 5 days, secondary for 7 and then bottle conditioned for as little as 7 days. It was ready to drink by the 7th day. Now, it's going fast so I'm about ready to brew another batch. I want to try something else, but friends want this one again. It's darn good stuff. Not much head. Yeast floc's at bottom of bottle - I get no yeast in a poured glass. I used the Safale yeast. I carbonated with a little more than the advised 2/3 cup corn sugar - I used 3/4 cup. Very easy and forgiving brew. Great taste and everyone loves it. Nice rich dark color (mine was a little bit darker than the picture) and very smooth nutty caramel finish. Force carb'd mine and tasted a little yeasty at first (used recomended Wyeast), but after I let it settle for a few more weeks in the keg, it tasted great. A beginner could do this brew easily. I just sampled my first pint this evening. I use the Tap-A -Draft system for inexpensive draft style ale and this recipe kit came out great. Nice color and aroma, the ale itself has a very nice smooth taste and I would recommend it to those who may not want to start with an ale that is to strong. I think I'll have another! My first brew, with the help of a good friend who's very experienced. This kit was recommended for the New Castle brown ale style that I enjoy. Total process was about 6 weeks, from open kit to open bottle. A very good brew, and once I get my own set-up complete it will be one of the first brews I try on my own. Wonderfully bold with nutty and caramel flavor (better than I expected), and impressively beautiful dark color. I agree with the other comments posted on this review page, and recommend that you give it a shot. I can't wait to share with my father and friends, who I know will enjoy it.
