A nutrient to be added to must when 1/3 of the alcoholic fermentation is complete to ensure complete fermentation, prevent production of sulfur compounds, and decrease the risk of stuck fermentation.
The main cause of sluggish or stuck fermentations is the dissolution of the yeast cell walls by alcohol, particularly at high temperatures. Nutriferm Advance provides nitrogen at mid-fermentation, allowing sugar transport proteins to maintain their vital activity until completion of the alcoholic fermentation. The majority of the nitrogen in Nutriferm Advance is derived from amino acids provided by yeast cell walls, supplemented by Diamonnium Phosphate. It also provides long chain fatty acids that help confer alcohol tolerance to growing yeast cells. Nutriferm Advance contains yeast hulls and cellulose, which have a detoxification effect by adsorbing medium chain fatty acids, known for their yeast inhibition effect.
Recommended dosage is 20-30 grams/100 liters. At a concentration of 100 ppm, Nutriferm Advance contributes 15 mg/L YAN (yeast available nitrogen) and 0.8 mg/L magnesium.
