Details
Pyment is a type of fruit mead fermented with red or white grapes, sharing properties of both traditional mead and wine. Honey is mixed with Pinot Noir grape concentrate in the primary fermentation. Late in the secondary, the mead is dosed with Hungarian oak cubes, which brings all the competing flavors together and adds a pleasant vanilla overtone. This serves as a great introduction to mead for those who love red wine.
