This was my third Winexpert project, and a was extra careful with everything, even doing a second racking, and going to great lengths to decarbonate it, especially.

The result was disappointing. The color was light red/dark pink. The carbonation was still there, but light. The taste is light but acidic: not much tannin. As per directions I added extra sulphide. The taste is detectable in the wine at 6 months. There is something about this that is likable, better than some heavy cheap $3.50 supermarket wines, but it is very "kit-like." Forget about rich Australian Shiraz. I've had that, I love that, and this is not that! (Posted on 2/12/11)

We bottled this wine 18 months ago, and have been drinking about 1 bottle a month. At first it was quite disappointing- rather thin and weak. It has continually improved every month however. By 12 months it was quite good, and tonight at 18 months it is very nice. It still has a touch of the original weakness, but the body has filled right out, and it carries over nice caramel and plum notes. Worth a try if you have patience! (Posted on 7/23/10)
