This strong-ish American amber ale is built for the cold: a substantial gravity for snowy weather, but a fast turnaround so you can get some holiday cheer from fermentor to pint ASAP. Malty but not too sweet, just enough bitterness to balance, a definite but not overstated citrus hop profile (bolstered by real citrus!), this is far from your normal holiday ale.

Its saturated copper-red hue comes from a blend of malts: pale chocolate adds a warm, toasty dimension and suggestions of black tea to the fig-and-toffee profile of two authentic English caramel malts. The earthy and dark dried-fruit character of the malt segues into bright floral citrus, thanks to the resinous lime-and-flowers velvet punch of Styrian Celeia and a charge of sweet orange peel at the end of the boil!

I love this beer so far. Spent 3 weeks fermenting and kegged yesterday. My wife's favorite batch so far, I added 2 vanilla beans to it for the whole fermentation cycle and it is very smooth and drinkable and the oranges give it a nice sweet flavor. Everyone around my house is in love with this one and are begging for more:-)

Ok...so I've brewed this tasty treat 3 times now and don't see why I would't keep brewing it for years to come. My mom doesn't drink nor like much beer at all and Loves the heck out of this brew if that's any indicator of it's drinkability. I add more orange peel...CHEERS to a CLASSIC! (Posted on 10/24/13)
No ferm problem here Review by Jesse

Everyone is speaking of vigorous ferm with this, I had no such problem as it has been slow and steady for the last week tailing off now. Gravity came in just a little low from suggested but wort was absolutely delicous. Can't wait for it to be ready (Posted on 10/7/13)

Looks Great So Far! Review by Parker

Ron,
I brewed this kit on 9/12/13, we added 1lb of corn sugar the last 15 minutes of the boil and got our OG up to 1.072! Like you I had crazy fermentation activity for 3 days and on day 4 it was very minimal. I checked the gravity on 9/16/13 and the gravity was a 1.020! I'm going to check it again on 9/20/13 and if the gravity is steady rack it to secondary. On a side not I tased the tester and it tastes awesome already, really excited to get this one carbonated! What was your FG? Review by Ron

My OG was on target. Visible fermentation...bubbling..slowed after 3 days...stopped at 4 days. I put in a strong starter, so I may have hit it with more yeast, which sped up the fermentation.

Can anyone tell me your final gravity to see if I hit target?

Thanks (Posted on 9/5/13)
