De Belge Farmhouse IPA is unlike any Belgian ale you’ve had before - aggressively bitter, roundly Belgian, brilliantly aromatic. Reminiscent of Orval (pick up some Brett. B to add that special character) before they scrubbed the calcium deposits off the coppers. Built on a base of Belgian pils with a small percentage of torrefied wheat to fill out the body and add a suggestion of creaminess, then hopped to high levels with European gems (Brewer's Gold and Hallertau, anyone?) and rippling with rich yeast fruitiness. Back before the world caught on to the brilliance of Wallonian saison, brewers were wont to over-hop as their hearts dictated. Here we attempt to capture their joie de houblon, and bring full circle the versatility of "old" hop varieties.

Tastes like a tripel with wheat in it. The hops are very floral and not in your face, so I wouldn't compare it to any IPA I've ever tasted. I'd add more hops if that's what you're looking for.

I nailed the 1.060 OG and still ended up with an extra gallon, so I put that in a separate jug and pitched the dregs of a Seizoen Bretta. Can't wait to taste that one!

This one attenuated all the way down to 1.002! It's delicious. I will most definitely be brewing this kit again. (Posted on 9/18/13)

Needs help to make an IPA (IMO) Review by DanS
First of all, let me say that this turned out great. But I had to make some changes to get what I wanted. I've been loving big belgian IPAs, like Raging Bitch, and I didn't really look at the De Belge recipe when I ordered it, so I didn't realize it would be nothing like these americo-belgian IPAs that I love.

Please note that I scaled this to 5.5 gallons, so all measurements are relative to that change.

The first thing I did was to dial back the IBUs. 80 IBUs just seemed way too high for a beer with no real malt flavor to balance it. So I put in 1oz of the Brewers Gold at 60 mins and 2.5oz of the Hallertau at 20 mins. This brought IBUs down to ~50. I really wanted to put in the rest of the hops as a flavoring addition, but since this was my first belgian, I didn't have the guts.

Well, sure enough, out of the primary it was all yeast esters and hop bitterness, but no hop flavor or aroma (what's an IPA if you can't taste/smell the hops?). So I dry hopped into the keg, with the extra 1/2 oz of hallertau, plus 1 oz of cascade and 3/4 oz of amarillo, to add as some spice/citrus overtones, especially since the 3952 yeast is really strong on bubblegum flavors and much less on fruit flavors.

After 4 days of dry-hop (in the keg), the beer is great. Still a really strong belgian pils/wheat base, with lots of orange and grapefruit on top. And now it really does taste like an IPA. If I were to do it again, I would add an ounce of hallertau and an ounce of cascade at flameout, and then pull the hallertau out of the dry hop.

First all grain brew as well. Love the BIAB method! The combination of the hops and the Belgian wheat yeast gives a wonderful floral flavor that isn't overly bitter, and is easily the best tasting beer I've brewed to date. I somehow managed to under-carb the beer and it is still fantastic. I will most definitely be brewing this again, but I will probably buy two kits just to have more beer with the same amount of work. I was afraid this Belgian, hop-happy recipe would turn out aggressively bitter, but it didn't. It was delicious: fruity, with a solid backbone and a finish unlike any extract recipe I've brewed (I guess that's the grain talking). And it actually turned out the same pale Pilsner color as the product shot because I didn't have to use LME. BIAB is awesome! (Posted on 12/29/12)

First allgrain. First review after ten northern brewer extract kits. Never had a bad batch, however this one stands out after the first sip. Slight old country hop aroma, Belgian wheat yeast really comes through, all balanced by the pilsner malt and a touch of wheat. Finishes with a delicious hop bitterness. Only problem it's a three gallon yield not five. (Posted on 12/8/12)
