This was my second batch after a rough first batch of many missteps. Now, after almost 9 weeks in the bottle, I feel confident that making good beer is possible. (I was not so sure after the first taste.) I have to admit, some bottles were not good. I think I am still figuring out a good sanitation routine. I tried to clean old commercial bottles. But the beer that survived my poor sanitizing regimen turned out great. The beer is so clear I can read my monitor through it. Except for some Whirlfloc at the end of the boil and a secondary of 17 days, I did nothing special to clear the beer, and it did not clear completely until 8 weeks in the bottle. I used the dry yeast and the beer turned out like a real IPA with with a slightly bready taste and a touch of fruit. The hops expressed themselves as citrus and floral. The head is about an inch in the glass with excellent persistence. The Maris Otter malt from NB really came through. I did not hit the projected gravity after the boil (1.059) and the final gravity was a little high (1.019). But the results in the glass were still good. After my initial skepticism about the nice comments from my friends (some homebrewers), I finally realized that this beer is good, and the recipe worked! I am giving the kit 5 stars, because I think it does a good job of helping extract brewers make good quality beer. For one thing, the late addition malt, really allows for better bittering hop attenuation in the boil. Newer brewers don't know these things (I didn't), and building the kit right helps a lot.
