Halcyon starts with raw Kansas wheat in the grain bill to give it a nice edge, but what really makes it shine is the hops - Tallgrass uses “hop-bursting” late in the brewing process to give Halcyon its palate of tropical fruit flavors & aromas with a bright and refreshing taste.

We strongly recommend ordering dry yeast in the summer months. We do include complimentary ice packs with all liquid yeasts. It is difficult to guarantee that the ice packs will survive the trip given transit times and particularly hot temperatures.

Tallgrass originally brewed Halcyon as their first summer seasonal, but since all the Halcyon fans (a.k.a: kiteheads) asked so nicely, they now brew this magical brew year round. Halcyon starts with raw Kansas wheat in the grain bill to give it a nice edge, but what really makes it shine is the hops - Tallgrass uses “hop-bursting” late in the brewing process to give Halcyon its palate of tropical fruit flavors & aromas with a bright and refreshing taste like the best days of summer.

A note on yeast: Tallgrass uses White Labs WLP007 Dry English Ale; with Tallgrass' blessing, we suggest Wyeast 1098 as the default option so customers (especially mail order customers) can more easily evaluate viability before brewing.

Brewed according to directions, pitched a vial of 1098 (no starter) and fermented at 62-63F for 2 weeks. After 2 weeks in bottle this beer is fantastic. Cloudy yellow with huge white head and fantastic aroma with orange/mango. Very clean with sweet wheat grain and mild, soft spice and creamy body. The citrus hop flavor really makes this recipe. A fantastic summer beer ... unfortunately I doubt this batch will make it past April. (Posted on 3/17/15)

I brewed this recipe as stated, only I added 1oz of Amarillo (in addition to the citra) and whirlpooled. Needless to say, everyone is going nuts over this beer! I mashed a few degrees lower than I intended (thermometer issues), but the beer still turned out fabulous. Finished a bit dry, which in turn, allowed for big tangerine and apricot flavors to really shine through on this. One guy swore this is one of the best homebrews he's had, and even offered to buy a case off me. Props to Tallgrass and NB for making this kit available. Not your typical wheat beer Review by Beerbythepool
Don't expect a typical wheat beer when you brew this one. I couldn't find any Halcyon in my area this year so I decided to brew my own. Turned out great. The British ale yeast gives you the hint of an English session/pub beer, but the Citra hops make it all- American. Easy drinking, but somewhat complex because of the mix of wheat, hops and British yeast. It will keep you coming back for more. Some of my friends were confused by it because they hadn't tried Halcyon, but everyone enjoyed it. (Posted on 12/11/13)

I've brewed this one before and recently ordered the kit again. It truly is a crowd pleaser that is fun and easy to brew time and time again. There's enough hop profile there for us "hop heads" to enjoy but at the same time it's a brew that your "American Light Lager" friends and family can enough as well. A beer as easy drinking as it is to brew, the citra hop bursting crowns this golden achievement. Halcyon marries a perfect balance of an unfiltered wheat palate with crisp and bright hop flavor. No dryness here, in fact its so deliciously sessionable this may be the perfect summer brew, even when it's snowing out.
