A Belgian Tripel that lives up to its name. Smooth and carefully crafted like a fine velvet painting, but with an 8.5% ABV this bird has some spurs! The beer pours a golden straw color with brilliant clarity. Topped with a lofty pure white head, the beer has a wonderful floral nose with subtle fruit notes. The taste is clean and crisp, with subtle fruit notes and a touch of candy-like sweetness. The beer has a Champagne-like effervescence that provides a crisp offset to its sweet finish. While a pint glass is always nice, Velvet Rooster would also be at home in a tulip glass or Champagne flute.

A note on yeast: Tallgrass uses White Labs WLP530 Abbey Ale; with Tallgrass' blessing, we suggest Wyeast 3787 as the default option so customers (especially mail order customers) can more easily evaluate viability before brewing.

This Tripel is one of the smoothest kits I've had the pleasure to make in nearly 20 years! I initially skeptical but at first pour this had me and my wife...who is rather picky. I wasn't in a rush and allowed 5 weeks in secondary before rolling into the kegerator. Everyone of my visitors who tasted the Rooster loves it - you can't go wrong here! (Posted on 8/2/14)

Just can't get enough of this. My first attempt at a Belgium style beer. Used a starter, had great fermentation. I let it sit in primary about one month, then tossed it in the keg. Crystal clear. It's tasty, smooth, unique flavor will bring you back to you tap time and again. (Posted on 6/13/13)

Been Brewing since 1993 and this was a very pleasant surprise, I made a 10 gal batch with yeast starter and added 16oz of Agave extract to raise the gravity. All I can say is Wow! the fruit comes forward, slightly dry and clean after taste, you can't just drink one but dangerous after three. Great job to those who put this together and oh, after two weeks in the conditioning carboy the beer was very clear, as if it was filtered. I will definitely brew this often. (Posted on 1/18/13)

Just Kegged this bad boy after 6 weeks. (2 in primary,4 in secondary). use White Labs yeast i got locally. Amazing smell and taste. Had a great fermentation at a steady 68. Great banana and slight plum aroma. Gonna allow it to age a little in the keg. Cleared up Nice. Can not wait to drink this up. Will Buy again!!!! (Posted on 9/6/12)

This was my first kit purchase, and I ordered it on a whim after watching the Brewing TV episode on Tallgrass. Put it in the keg 4 days ago, and I have been sampling frequently.
