By Jeff Sparrow. This book covers the "spontaneousely fermented" beers of Belgium, namely East Flanders brown, West Flanders red, and lambic. Although many have claimed that these beer styles can only be brewed in their native Belgium where the microorganisms occur naturally, Sparrow shows how these styles can be brewed anywhere by cultivating and controlling the proper microoganisms. 315 pages.

Great info about a great style of beer. Review by Mark Wilk
Rating
This book gives insight into the techniques of brewing sour ales, both past and present. A great read for anyone who is wondering how to be brew these styles at home or for those just interested in a history of beer as we know it today. Wild Brews even gives a few starter recipes for those patient and brave enough to try these at home (it takes 6 - 36 months to ferment most of these historic styles). (Posted on 6/14/11)
