10.5 liters of must using California and Italian Barbera is fermented on a 1.5 liter virgin California Barbera crushed grape pack and untoasted American oak to deliver a medium-bodied wine with unique complexity and character. Deep crimson color. Fruity aromatics, dominated by raspberry and blackberry, with lightly spicy notes and a suggestion of vanilla. Well-rounded mouth-feel. Flavors of black fruit and a nice finish. Six months aging is recommended to refine the balance between fruit, spice, tannins and oak. Will continue to develop for more than a year. This wine should match well with a wide variety of hearty foods. Italian pasta with tomatoes, eggplant, chicken or red meats, and anything barbecued!
