I add a can of this elderberry to my acidic home squeezed blackberry juice at a 1 to 3 ratio. The high ph of the elderberry allows a starting ph of 3.5 without other adjustments.

This makes a great wine!
It sure beats picking elderberries along the railroad tracks. If I make it on the dry side it makes a great dinner wine. If it's sweetened a little it make a fine drinking wine. In fact I'm drinking some right now as I write this review. I use Red Star Pasteur Blanc yeast for it's high alcohol tolerance.

What is the shelf life of a can of this juice base ?

BEST ANSWER: We figure they should be good for a few years with no problem. As it is food, it's better to use them sooner than later, but these should be shelf stable for a good long time. I'd try to use them within a year or two.

What's the best Lalvin yeast to use with the Vintner's Harvest Elderberry Base?

Thank you for contacting us! I would say if you want to stick with Lalvin

I would go with Lalvin RC-212 Red Wine Yeast. You could also go with Red Star Montrachet Yeast for a dryer finish. Realistically any wine yeast will do the job

but it all depends on personal preference on what sort of flavor and finish you are trying to accomplish.
