Hi! Is this modified enough to do an infusion mash, or do I need to do a protein rest/step mash? Thanks!

BEST ANSWER: It is fully modified so you can do a straight infusion mash with good results.
Is this available in a 55 lb bag? If so, how do I order it?

BEST ANSWER: I live in a 1 bedroom apartment, and do 1 gallon all grain brewing, so no. I'd say ten pounds of grain is all I keep on hand at a time, and that includes base and specialty malts.
