We strongly recommend ordering dry yeast in the summer months. We do include complimentary Cold Ice Packs with all liquid yeasts. However, it is difficult to guarantee that the ice packs will survive the trip, given transit times and particularly hot temperatures.

At first glance this beer is as white as a frozen tundra, but upon closer scrutiny, tall drifts of American hop flavor and aromas abound. A traditional witbier grain bill and yeast strain coupled with West Coast American hops yields a wonderfully complex India White Ale beer kit. A slight spice and tartness from the yeast intermingling with citrus notes from abundant hop additions compliment the silky smooth body created by flaked oats and unmalted wheat. Go-to IPA
This is my go to IPA. It's well balanced and very drinkable. People who aren't crazy about IPAs like this beer. Because most of the 5.5 oz of hops come later in the boil or in the secondary, you get plenty of flavor and aroma with a nice balance of bitterness against the inherent sweetness of its Belgain witbier origins. I've made this beer five times and have come up with a couple of modifications to the already very good recipie. First, when I make my late add of malt 45 min into the boil, I stop my timer until I get the pot boiling again--about 5-7 min or so. Then I make the scheduled hop add 15 min before the end of the boil. This gets a little more bitterness out of the hops already in the pot and it ensures I only keep the flavor hops in the pot for 15 min and not longer while Im reheating the pot after the late add. The other mod is that I add a second dry hop infusion about 5 days before I keg. I use the .5 oz summit left over from the boil and an oz of centennial I buy separately. This really adds to the hop experience when you drink it. Sounds so good, I think I'll have one now...

Bottled and waiting!
Just bottled this yesterday and took a taste sample durting FG testing which came out to 1.011, even flat this beer is going to be fantastic, great hop aroma nice bitterness and good body, cant wait to try it in a few weeks!

Good beer
Loved this recipe! Good, lighter bodied IPA. Very balanced and easy to drink. Not as bitter as other IPAs, which makes it more approachable for people who aren't necessarily hop heads.

Amazingly smooth and fruity for a heavy hopped IPA
I will brew this one over and over. All my friends loved it and asked for more. It is heavy on hops, but light on the bitter kick. Very smooth, almost light considering the hops added and balanced. One of my favorite recipes!

Absolutely fantastic! Will be adding this to the IPA rotation irregardless of season. Kegged six weeks after brewing and it just keeps getting better.

2nd time just as good
I absolutely LOVE this brew. I haven't really sensed the Belgian yeast so I'm not sure what it adds, but this is one of my favorite brews. The hop profile is fantastic and this is a good IPA year around.

Probably the best NB IPA yet
Long time brewer (20+ yrs) and brewer of all grain, partial, and extract kits (depending on time available and recipe). I have to say that the permafrost white IPA is the best IPA kit I've ever brewed. (It's not white though) Not that the others I brew regularly (Plinian Legacy, Dead Ringer, Chinook IPA) aren't great, it's just that this recipe is really on it. Full bodied and really well balanced, this beer provides a continuous flow of hop goodness from first sniff to the last taste of bitterness sliding off the back of your tounge. I can't keep this one on tap-- even with others mentioned on tap right next to it. I just brewed my fourth batch...

Update to 2/21/14 Review
This turned out excellent. It took a full four weeks of bottle conditioning to fully carbonate and mellow, but it was worth the wait. If I make this kit again I'll do half of LME at the beginning of the boil and the rest just before the end to get a lighter color, as it turned out amber colored. I don't have the capability to do a full boil or all-grain yet, so I'm limited to late malt additions to achieve lighter color.

Second brew
This was only my second batch I have made, 2 wks in primary, 2 wks of dry hopping in secondary. It came in with and ABV of 8.3. After bottle conditioning for 2wks I have to say this was fantastic and it was extremely hard to only have a couple at a time! I did come out darker than I had expected but that didn't bother me. I will be brewing this one numerous more times.

I did this a year ago, still had some bottles to break out this holiday and it really stood up well. Everyone loved it. Will definitely make again.

Would you recommend using a yeast starter kit for this brew?

BEST ANSWER: Yes I could recommend that a yeast started be used. I however used the wyeast option. Letting the yeast activate in the pouch was enough for me to get fermentation off to a very healthy start.
This recipe calls for a 20 min steep of the oats and unmalted wheat, does this need to be 'mashed' with a base malt?

BEST ANSWER: No, steeping the oats and wheat will just fine! I highly recommend Irish mosh (or similar) to take proteins out of suspension because the wheat/oats are higher in protein. I won't make that mistake again.
