Great Cider Yeast
I used this yeast in a batch of local fresh pressed cider. After fermenting in primary I racked it over a couple crystallized ginger pieces for a Ginger Cider.

The end product was then kegged and enjoyed!

Keeps much of the cider flavor profile and more apple-ness than most other yeasts I have used.

The WLP775 was dead on arrival
The ice pack was warm water, and the yeast was dead, so I wasted $50 in cider because I had no yeast.

Another convert
I've been brewing ciders for a few years now using less expensive yeasts with what I thought were satisfactory results- until I bit the bullet and splurged on this cider yeast from White Labs. HOLY COW, what a difference. The cider it produced was cleaner, brighter, and more flavorful than anything I've made before.I used a simple recipe for a basic English style cider. 6 gallons of store-bought apple juice (wal-mart brand!), 6 bags of black tea brewed in 1 cup water (for tannins), 1 tablespoon of malic acid, and nothing else. It took about a month to ferment dry at 65 degrees, and I aged it on oak for a week following a month in secondary. Simple, clean, and beautiful.Do bear in mind that this yeast produces copious amounts of sulfur throughout primary fermentation- it was so strong that I tightly attached a plastic trash bag to the airlock to prevent the odor from permeating my living space. I was worried that the cider would be ruined. As promised, however, the sulfur disappeared soon after racking to secondary, and after a month of aging no trace remains. One thing I haven't seen mentioned is how compact the lees are with this yeast- my cider actually cleared /during/ primary while bubbling away; not a trace of cloudiness remained by time I racked it, and the lees remained completely undisturbed by my auto-siphon.I'm sold; the results speak for themselves. The cider I made using this yeast is by far the best tasting, easy drinking, and pleasurable batch I've produced, with clean, strong apple flavors which are just perfect. I look forward to using this yeast for just about every recipe I make in the future.

A real dissappointment
Northern Brewer sent yeast with a shelf life of about 30 days. I received yeast that will be out of date Jan 2016 at the end of December 2015 I will go bad before I can use. What a waste of money. I feel I was ripped off.

Hi Scott, thanks for writing this review. We post all reviews, but it could be taken down if you wanted to resubmit after we help. Sounds like the yeast might have been towards the edge of its best by date....if you will not be able to use the yeast we could replace no problem. Usually a yeast starter fixes up old yeast and gets them back in fight form, but we can send replacements if you need. Sorry if some old ones slipped past, but happy to help. I was hoping to find out a few things though. Did that yeast come in vials or in little pouches? What was the exact date the yeast had for its best before date? It would also be great if I could get the address verified.

High attenuation with 2 stage starter
My cider fermented down to .96. Wow 16% abv! Used wine conditioner to back sweeten quite a bit. Dispensed 4 gallons of this for Thanksgiving with no complaints.

Was a little worried the first time I pitched this yeast as it took a full day to start. But once it did it was off, bubbling like crazy. Fermented out in less than two weeks.

Quick and Clean
I can make a batch of hard cider in 7 days that is very drinkable right out of the fermenter and very clear.I'm sure aging would improve a little. But I have done 4 batches each fermented and cleared in 7-10 days and was happily consumed by my friends. Nice apple flavor hold well through ferment.

I used fresh local cider from the farmer's market, and brewed it with this yeast. I was able to bottle after just four weeks (three in primary, one in secondary). OG 1.075, FG 1.021At about 7% ABV, the cider was drinkable on bottling day, and delicious, with mellow flavor and no significant alcoholic bite. I'm setting aside a few bottles to age, but I'll never make cider with another yeast again.

Great Strain
This is a great strain of yeast. If you like your ciders sweet, this yeast crashes well. Ferments fast and clean. This is the only strain to use.

BEST ANSWER: Plastic vial holds about 4oz. -- appropriate for a 5 gal batch (you can make a starter, or pour directly)
Do you need to make a starter with cider yeast? Do you treat it just like beer yeast?

BEST ANSWER: Treat it like beer yeast, it only needs a starter of the cider is above 1.060. If the yeast is old I would recommend a starter but northern brewer normaly has really freash yeast.
