Rehydrated 1.5 packets to use on 1.072OG saison. Pitched at about 75degrees, rose to 85. Excellent attentuation, finished dry, about 1.004 FG.
This yeast is really a monster! Eight days from 1.043 to 1.004 which is equal to 90 percent attenuation. Would have probably been even lower than that if hadn't had wheat in my grain bill. The caveat with the yeast (and hence the less than stellar rating) is that it is massively POF+ and therefore throws a lot of clove. There is a peppery note in the background which makes a candidate for a Saison-type beer instead of, say, a Bavarian wheat.
I’ve used this yeast a few times now for saisons. Never had any issues with yeast from Northern Brewer.
Made a 10% ABV saison-style braggot with this yeast. 50 % of fermentable honey and 50% malts with touch of wheat. Good starter, strong fermenter to dry finish at low-to-mid 60's ferment temp. Just the right amount of spice finish. Impressed. Will use again.
