Before hops became the conventional flavoring for beer, medieval European brewers used proprietary spice mixtures, and many modern breweries still use a blend of spices along with hops for seasonally-brewed holiday beers. In this recipe kit, we started with a Scottish-style ale and added a blend of spices and quality ingredients to create a delightfully sippable beer with a sweet, exotic spice character reminiscent of mulled wine.

Good winter beer

I wish we had made this earlier in the fall/winter. Tasted like the holiday season! We added 2 orange peels in the first stage of fermentation. We added 2 more in the secondary as well as a few cinnamon sticks. The cinnamon is stronger than the orange. It was our first time trying something that was not on the recipe card -it turned out wonderful.

Great Seasonal Beer

While spiced beers aren’t exactly my cup of tea, I brewed this kit to share with family and friends over the winter holidays. The kit comes with 2 three lb bottles of LME, one lb of crystal malt, one oz of Goldings hops and a small bag of mulling spices. I used my own priming sugar and yeast. The instructions called for adding the mulling spices during the boil but I added them during secondary via a carboy infuser. I increased the volume slightly to account for brewing losses and bumped up the gravity with some honey. I also added Clarity Ferm to reduce/eliminate the gluten. The beer turned out exactly as desired with a nice copper-ish color, good head retention and plenty of mulling spices.

My main complaint with kits is that they don’t publish Lovebond values for the various components. If you want to adjust the recipe to compensate for trub or fermentor losses etc, you have to estimate the values to plug into your brewing software.

Seconds!

This is a repeat for me.Great Christmas beer. Easy too. One extra step. I recommend pouring the flavorings through a filter bag and letting them mull like a tea bag. Some siphoning could be tough without it.
