This pale, light-bodied golden ale is copyrighted by, brewed in, and named for the German city of Kön. Kölschbier is traditionally given a long, cold aging period like a lager, which makes for a very smooth and clean beer. A small dose of German Hallertau hops cuts the richness of the malt. "Spritzy" is a word often used to describe Kolsch - very refreshing, and a popular lawnmower beer for beer snobs!

Sure tastes German

Pretty simple kit to brew, haven’t bottle conditioned yet but the flavor is good. Came in at about 5.3 ABV, nice and clear. Dry hopped with a half oz Cascade and added lemon zest to the secondary. All in, only about 3.5 weeks between primary and secondary at about 63 degrees, but the flavor is there, the SG has settled and I’m just impatient. Time to get this show on the road.

I salvaged the Kolsch

Kveik yeast sped the process up to 4 weeks. However, my wife exiled my homebrewing to the garage. On bottling day, I added additional yeast and sugar to the bottling bucket. Being out in the garage and too lazy to get a serialized spoon, I thought the siphoned beer swirling into the bucket would sufficiently mix. I was wrong. Some bottles were overly foamy creating a head that was hard to pour. Whereas, others were totally flat. I enjoyed tasty foam mustaches in a very large glass. Pouring out a little of the flat bottles and adding a sugar solution with a few grains of dry yeast and recapping, the rest was saved!
