When I first started brewing stouts about 40 years ago I got stringency from the Roasted Barley (1 lb for 5 gallons). Another brewer told me to use a lb of Flaked Barley for every lb of Roasted) That got rid of the astringency without reducing the Roasted Barley flavor. I have been using it ever since,
