Notes from Brad, Northern Brewer Development Brewer:
“Hard seltzer waters are all the rage these days, so why not ride the wave? This kit is a very simple and straightforward fermentation consisting only of dextrose (corn sugar). The resulting product is boozy water, coming in right at about 5.5% ABV and is then flavored with all-natural crystallized citrus and mint powder.
To ensure the best results with this kit, be sure to follow the directions and add the yeast nutrient packets according to the schedule described. Adding yeast nutrients in staggered additions ensures that the yeast remain happy and healthy and will avoid any off-flavors that stressed-out yeast can generate.
The fermentation will be complete within 2 weeks or so, but be sure to leave this batch sit for a few additional weeks to allow the yeast to drop out of solution and leave behind a clear beverage.
We have also included more flavoring than likely needed, so you can decide how intense to make the flavor - add a little at a time and taste until you are happy with the taste."
i used 2 flavor packets in my 5gal recipe. tasted awesome!
Very difficult to do at home and unless you have water chemicals and the equipment needed to change the pH of the water to the adequate pH that it requires. Strong sulfur smell when brewing
This is the 1st time I made hard seltzer and it was ridiculously easy! Followed the instructions to the letter and it resulted in a very clear, crisp seltzer. The mojito flavoring is very tasty (we used it all and it wasn’t over powering) I chose to make this because my wife needs to be gluten free and this was a delicious option for her! We’ll be trying more flavors, perhaps in the spring.
My first go at a hard seltzer...very pleased. I didn’t get the ABV I was hoping for, but a nice refreshing drink!
Good seltzer. A little dry at the end almost like a dry champagne. Needs a bit more lime flavoring so I added lime at serving and added flavor and took the dryness out of it.
