"Hard seltzer waters are all the rage these days, so why not ride the wave? This kit is a very simple and straightforward fermentation consisting only of dextrose (corn sugar). The resulting product is boozy water, coming in right at about 5.5% ABV and is then flavored with all-natural crystallized grapefruit powder.
To ensure the best results with this kit, be sure to follow the directions and add the yeast nutrient packets according to the schedule described. Adding yeast nutrients in staggered additions ensures that the yeast remain happy and healthy and will avoid any off-flavors that stressed out yeast can generate.
The fermentation will be complete within 2 weeks or so, but be sure to leave this batch sit for a few additional weeks to allow the yeast to drop out of solution and leave behind a clear beverage.

Shipping was quick and everything showed up in perfect condition. The kits were missing the crystallized grapefruit packets tho. I’m going to try and do a hard lemonade anyway. I’m sure that if I called, NB would have sent out the missing ingredients ASAP. I’m not worried. 4th hard seltzer kit I’ve made so far and it’s great every time. I’ve been buying brewing gear and ingredients from NB for 8 years and they always provide the best prices and best brewing materials. Thanks everyone! Keep up the good work!
The kit has all the right ingredients and tastes great. I made a few changes from the insructions that were included. I followed Lalvin's instructions to rehydrate the yeast before I added it to must. The EC-1118 yeast should be good from 45F-90F but an active fermentation didn't kick off until I brought the carboy to 76F. I would have added a clarifier after 2 weeks but due to the virus I wasn't in a hurry to keg it so I let it sit for another month. It's very clear. I pressurized it to 20psi.
Took 5 weeks to ferment. With pitching a second pack of yeast 10 days in because it stalled. Also had to continually add yeast nutrient and yeast energizer. Just bottled it so I haven't got to try it yet.
The flavor is a little weak and the alcohol % is low
I was really excited to retry this, followed directions and nothing happened. It seems a lot of people have problems with these kits. After 4 weeks it smelled horrible and I dumped it. Perhaps when some improvements are made I might try it again but for now I will stick with the beer
