Lalvin EC-1118 Prise de Mousse Wine Yeast
Lalvin EC 1118 (AKA Prise de Mousse / Saccharomyces bayanus) Champagne yeast is a low foaming, vigorous and fast fermenter good for both reds and whites. It is also ideal for ciders and sparkling wines. A very competitive yeast that will inhibit wild yeasts. It will restart stuck fermentations because of good alcohol and sulfite tolerance. EC 1118 yeast is a very neutral strain that will have very little effect on the varietal character of the grape. A popular strain that ferments fully and flocculates well producing compact lees. Good for cool fermentations. Champagne, dry reds, whites, ciders and sparkling. 45-95° F (7-35° C) alcohol tolerance 18%
Work as advertised
Works fine. I’ve found with seltzer that using additional yeast nutrient helps. Also, be sure to hydrate the dry yeast prior to pitching.
The yeast was not set to expire and is predictable. The price was good, too.
Used this product for plum wine.
Fermentation was active, but not overly aggressive. Long 1st and 2nd fermentation periods behaved perfectly, yielding our target estimated ABV of 15%. Burned most sugar so nice dry wine was bottled.
Would give 5 stars, but I won’t be tasting the wine until after another 7 months of bottle aging. I guess we’ll see!
Working great in the hard seltzer. Cant wait to try it in a couple weeks!
