Product details

AKA Geisenheim Epernay. A low foaming slower speed fermenter with low alcohol tolerance. This strain emphasizes fruit character in both reds and whites making it an excellent choice for fruit wines, especially apple. Great for ciders.

If fermented at cooler temperatures it will not ferment to dryness producing a sweeter wine with some residual sugar. For the production of Chardonnay use in conjunction with yeast nutrient. Sweet whites, fruit wines.

Temperature range: 64-86 F. Alcohol Tolerance: 12-14%.

Red Star Cote Des Blancs Yeast

Yep, it's yeast all right. Seems to work ok, but won't know what the wine is like until it ages for a while. The barrage of e-mails asking for a review of a standard product are pretty annoying, though.

Worked great for hard apple cider

I normally brew beer, but have some family members that can't drink it due to dietary issues. They love apple cider, so I bought this to brew a 5 gallon batch. I used 2 packs of Cote Des Blancs yeast, 5 teaspoons yeast nutrients, 5 gallons Mott's apple juice, and 2 pounds dark brown sugar for a very drinkable cider. My friends liked it so much I just started my second batch. I probably needed only one pack of yeast, but since it's so cheap and I added the extra sugar I figured two would work fine and it did. This is a great cider yeast.

so far so good. it would be great though, if in future packaging you could devise a method that divides the amount into at least quarters. some wine recipes call for only 1/4 of the package and to some that are just starting it may be difficult to apportion a small amount.

I made 4 different small batch meads with NBs glass jugs. I tried 4 yeasts and this one along with EC-1118 were my LEAST favorites. Both fermented well and were fairly dry but my initial experience is that they leave funky aromas. Not pleasant at all! D47 and K1-V1116 won the battle, having nice floral, fruity delicate notes..

This yeast does a great job of reducing sugars in the must. I use it exclusively.
