Red Star Premier Cuvee
AKA Prise de Mousse. One of the fastest, cleanest, and most neutral of all Red Star wine yeasts, this strain is recommended for reds, whites and especially champagnes. Good for restarting stuck fermentations. Temperature range: 45-95 F. Alcohol Tolerance: 18%.
Used with fresh fruit and purchased fresh pure juice. Will work with a high starting SG of 1.120 and provide good results. Normal amount of settlement
Love this for fruity stuff, meads, or anything I want bright and sparkly with a high OG
This yeast does a good job with out much foaming. Starts in about 24 hours.
I start the yeast 12-24 hours ahead of pitching it with some yeast supplement and 1/4 tsp of tannen. Every time I have done this, the yeast works wonderfully and reduces sugars nicely.
