"Hard seltzer waters are all the rage these days, so why not ride the wave? This kit is a very simple and straightforward fermentation consisting only of dextrose (corn sugar). The resulting product is boozy water, coming in right at about 5.5% ABV and is then flavored with all-natural crystallized grapefruit powder.

To ensure the best results with this kit, be sure to follow the directions and add the yeast nutrient packets according to the schedule described. Adding yeast nutrients in staggered additions ensures that the yeast remain happy and healthy and will avoid any off-flavors that stressed out yeast can generate.

The fermentation will be complete within 2 weeks or so, but be sure to leave this batch sit for a few additional weeks to allow the yeast to drop out of solution and leave behind a clear beverage.

We have also included three separate packets of the flavoring, so you can decide how intense to make the flavor - add a little at a time and taste until you are happy with the flavor level."

Changed the recipe

I used Lutra yeast and Propper Seltzer nutrient after reading about other's stuck fermentations. Managed to hit my OG and FG perfectly.

The flavor was pretty weak (I only got one packet, not the three advertised) but managed to save it with some blood orange extract I had sitting around.

Lastly, I thought I had an infection near the end because it smelled very sulfur-y, but it cleared up after about another week in the fermenter. The next batch had the same problem, and I resolved it by CO2 flushing. If you encounter this smell, it's not a serious problem, probably just stressed yeast.

Okay - didn't ferment well

Weak fermentation, the alcohol level was low. Since I was kegging, I dumped in a few cups of vodka to get it to an acceptable level.

The taste is fine - it takes just like White Claw grapefruit. I used the whole grapefruit package, and it was maybe a touch strong, but not too bad. Overall, flavor is good, but the alcohol content wasn't great.

I’ve brewed about 12 beer kits from Northern. All went great. I’ve tried this seltzer kit twice now. Both got dumped for lack of fermenting. IMO this hard seltzer kit is lacking. Shouldn’t have to buy more yeast and/or nutrient to get it to finish. Oh well. Back to beer!
