Omega Yeast 500 Saisonstein Monster
The first in our line of hybrid strains. Saisonstein Monster is a genetic hybrid resulting from the mating of strains OYL026 and OYL027, created by and available exclusively from Omega Yeast. You will not find this strain anywhere else. Less phenolic and more fruit character than 026. Exhibits some of the bubble gum character of 027.
*NOTE:*During summer months, we include complimentary ice packs will all liquid yeast orders. However, it is difficult to guarantee that the ice packs will stay frozen given transit times and particularly hot temperatures. For this reason, we recommend ordering dry yeast during summer months.

Works like yeast
My first run with Omega yeast and I’m a believer! I made a starter that kicked off fermentation almost immediately and kept the airlock going for 2 weeks. It did not floc out well. Definitely Belgian leaning with a little tartness. I fermented at 78-84. I will absolutely use it again.
Pitched into 1,078 all-grain wort and aerated. Fermented at 66F for 8 days and dropped the gravity reading down to 1,030. Moved the fermenter to the 80-85F garage and after 4 days there it came down to 1,010! I bottled straight from my SS304 Brew Bucket, and after only 1 week in the bottle it tastes fantastic. Clean, nice spicy Belgian Saison profile and no booziness for a week old 9% Dark strong Saison. Will definitely use it again.
