Elysian Brewing Company's very first beer, The Wise ESB is the beer that put Elysian on the map as one of Seattle's defining breweries. First a local favorite, The Wise soon became the world-class brew everybody wanted, as well as a symbol of Seattle's iconic beer scene. We started with the authentic recipe supplied by Head Brewer Josh Waldman, then we tweaked and tested, added and experimented until we came up with the perfect combination of malty, hoppy, bitter and crisp. The result is a glorious reddish-copper ale that perfectly balances complex malts with bold local hops and sweet, subtle aromas of caramel, honey, citrus and a hint of pine.

Reddish-copper ale that pours with a thin, creamy beige head. There are sweet, subtle aromas of caramel and honey, with notes of citrus and a hint of pine. Pleasantly bold hop flavors (bittered with Chinook, finished with Cascade and Centennial) against complex, malty depths. Well-balanced and delicious.

I have graduated to all-grain and have several brews under my belt, brewing 10 gallon batches. This is hands down the BEST home brew I have ever done. During my brew day making this beer, I made several mistakes. This is a very forgiving beer and now I'm worried I won't be able to repeat the outcome. You can bet I'm certainly going to try this again....SOON.
I'm doubling down... is was so good the first time I'm brewing it again. Excellent example of an Extra Special Bitter! Didn't last long on tap!

I did boil down to 4.25 gallons, smelled good tasted bad almost a drain cleaner
