Tallgrass Halcyon Unfiltered Wheat Pro Series All Grain Beer Recipe Kit
Tallgrass originally brewed Halcyon as their first summer seasonal, but since all the Halcyon fans (a.k.a: kiteheads) asked so nicely, they now brew this magical brew year round.
Halcyon starts with raw Kansas wheat in the grain bill to give it a nice edge, but what really makes it shine is the hops - Tallgrass uses the method "hop bursting" late in the brewing process to give Halcyon its palate of tropical fruit flavors & aromas with a bright and refreshing taste like the best days of summer.

A note on yeast: Tallgrass uses White Labs WLP007 Dry English Ale; with Tallgrass' blessing, we suggest Wyeast 1098 as the default option so customers (especially mail order customers) can more easily evaluate viability before brewing.

This is a clean tasting refreshing beer. Very well balanced. Not too much bitterness and not too much Citra. One of my summer favorites.
Was on my list to try just for the price but it came out really good. It's has a slight hazy clarity with a small citrus after taste.
Would definitely brew it again if I had enough taps.
It's an ok beer. I wanted to be as close to the original brewers intent so I sought out a wlp007 British ale yeast. Couldn't find it so I substituted a wlp005 British ale. Thar imparted a fruity flavor on the beer.
Nice mouthfeel, flavor, and delicate head. Misread the recipe and over hopped so not quite true to form but still quite good. Will definitely try again without the operator error for my son-in-law's preferred style.
I've ordered this kit time and time again, as ALL of my friends and guests that have tried it have absolutely loved it. Whenever I run out, I get requests to brew this one again.
