With a more pronounced aroma and greater mouthfeel than dry mead but with lower residual sugar than a true sweet mead, medium or semi-sweet mead has a very justified broad appeal. Includes Wyeast 4783 Sweet White wine yeast. OG: 1.080-1.083. Time to make: 3 months minimum.

NB Artisanal Mead Kits. Based on Ames Farm amazing honey, these are simple, uncluttered traditional meads designed to let the honey shine through. Because the floral sources and composition of Ames Farm honey will change with the season and years, and are dependent on variables like hive placement and weather, every batch of these kits will be unique.

Each mead making kit is available in two sizes - three gallon or five gallon.

Good straight forward mead

I've been playing around with flavoring mead lately. This time I just wanted a straight forward mead. This is the one. Not too sweet. Not too dry.

Easy to Start Making Mead

Great kit - even easier to start making mead than brewing an extract beer recipie. You do need to obtain a fermenting vessel to use the kit, as none is included. Luckily, there are plenty to choose from - I bought the Big Mouth Bubbler (ported) and it is great.

NB Artisanal Standard Semi-Sweet Mead Kit

This is my 1st time to make Honey Mead. I'm still in the clearing stages, but I back sweetened it, and took a taste today months early. It has a strong honey taste, and coming in at 18%

Not really Impressed...

Finished super dry and tart - as in final SPG reading about 1.001. Ended up adding about a pound of honey into the 5.5 gallon batch after secondary fermentation then cold crashing it just to sweeten it up. The dry isn't really the problem - but the tart a bit sourness is really kind of depressing. Could have been the yeast - normally I just use ordinary dry champaign yeast; this time I think I used a Wyeast yeast. Out of maybe a dozen batches of mead, take tops for the least favorite batch. Like other meads, should mellow out over time and the favors blend together. Will probably not buy again.
