Product details

This yeast produces a clean, malty beer with pleasant ester characters that can be described as “bready.” It ferments successfully and cleanly at higher temperatures, combined with good flocculation and good attenuation.

Tasmanian Devil IPA

There are lots of great flavors in this beer. I'm not sure if there are TOO many flavors? Also very smooth, not sure I'd call it an IPA. Not to sound negative, because it is (was) a very good beer, and tasted well to the end of the keg. Would make it again when it becomes available...have to ensure my taste buds weren't "off". ;-)

My yeast was bad when it arrived so I didn't get to brew it

Superb Brew!

I'm normally not a "hoppy beer" or IPA fan, but often brew them for my friends who are. This one won me over. All-grain brew day on my indoor all-electric setup went smoothly with all the numbers working out well. I did a yeast starter and added my usual salts and some Irish Moss, along with some servomyces. Primary kicked off within hours, went quick and was down to 1.011 (from 1.062) in seven days. I left it in secondary for four weeks because I was still seeing some fine bubbles rising up. Sure enough, after four weeks it was all the way down to a very dry 1.004, yielding and ABV of 7.9%. against my expectation of about 6.2%. It also cleared nicely, with just a very slight haze. I kegged it with about 13psi @ 37° for a week and started drinking. Wow. Great citrusy/floral nose, hop forward with a nice, fruity flavor. Nice hop/malt balance. No lingering bitterness. Looks great in a glass - nice golden straw color, creamy lingering head with nice lacing. Too bad NB doesn't have any more of this great yeast! I'd definitely brew it again.
