WLP380 Hefeweizen IV - White Labs Yeast
Large clove and phenolic aroma and flavor, with minimal banana. Refreshing citrus and apricot notes. Crisp, drinkable hefeweizen. Less flocculent than WLP300, and sulfur production is higher. Apparent attenuation: 73-80%. Flocculation: low. Optimum temp: 66°-70° F

Used this to brew a hefeweizen, fermented ~62F. Turned out quite clove-y and refreshing, a little lacking in the traditional banana flavor, but that is most likely due to the lower fermentation temp. A higher fermentation temp will supposedly lead to more of the banana characteristics.
I bought this yeast along with the kit for Hank’s Hefeweizen. I ended up with a delicious beer with some banana and orange flavors and about 7% abv.
By the time my ingredients had arrived the liquid yeast was warm and had activated itself.
Used with a Hefeweizen extract kit. Great blend of banana and clove. Ready to try it with a beer in a bag kit.
I really like the flavor of this yeast. Not an expert but it seems That it has less banana then some and maybe more cloves. I really like it.
