Dual purpose unit.
Even though it's really just a bottled water dispenser it works fine for kombucha. The plastic ring at the opening works well to hold down whatever covering cloth you use.

Save your money, don't buy this garbage.
This product is a thin, poorly manufactured, piece of garbage that NB is way over charging for. My suggestion for NB is to quit carrying the product or give more honest pics of it. Did I forget to mention there's No lid, oh it's really supposed to be a water dispenser but you wouldn't know it because the pictures are purposely deceptive. The only reason I didn't return it is my dog ate the box, no kidding, my dog actually ate the box. Everything I've ever bought from NB has been great and a rock solid product until this.

Kombucha Fermenter
I ordered this item and it arrived in a box showing it was a "Stainless Steel Water Dispenser" . It holds an inverted 3 gallon water jug to replace porcelain water dispensers.
It shows nothing about Kombucha Fermenter! Really???
It is very light weight and not the quality I thought it would be for $50. While it will work for the intent of Kombucha, the advertising was very misleading calling it a Kombucha fermenter when it is nothing more than a water dispenser!!!!!!!
While I will keep this item, I will be very hesitant to order another product until I research it very well on this site!
Just be honest and call it by the name it shows on the box when it arrives! Then explain you can use it for the product you are generating interest in!!!!! Not real happy!

I read where you can replace the plastic spigot with stainless steel. I can't find this item on this web site?

Most kits and SCOBY's for Kombucha are for one gallon batches. If you want to get this carafe going for continuous brewing, how would you start if you only have a one gallon kit?

BEST ANSWER: Thanks for contacting Northern Brewer. I understand you have some questions about continuous kombucha brewing. A SCOBY will continue to grow and be more healthy. You just need to allow the tea to ferment in the vessel at least 7 to 30 days, but that would depend on your personal palette. The longer the fermentation the more vinegary the taste will be. You will then be making weekly ratios of sweet tea and cooling it before adding to your fermentor. If you wish to draw off kombucha to drink daily but only feed the mixture weekly, be aware that kombucha drawn off at the beginning of the week is likely to be sweeter than kombucha drawn off later in the week, so you may want to harvest a certain amount then put new sweet tea in, bear in mind to leave 20% liquid in the fermentor to help ferment the new tea. Could you please picture the lid and how it fits to the neck. I don't see the muslin coming over the sides? I realize this is all staged for pictures but I need to know how cat proof the top is. Thanks

BEST ANSWER: That plastic collar in the pic is just a open circle that just sits on top. That's it. I included pictures in my review of the product but if you're asking this they must not be posted. Essentially it's not cat proof. So you take your muslin cloth and rubber band it over the top and that's it. You could spend way less money on this product or a much better glass tea pitcher. Honestly man, I'd feel bad if you brought this from NB.
Can this be used to ferment small batches of beer?

BEST ANSWER: That could be done, but we'd suggest a Little Big Mouth Bubbler as being better for that purpose, as the spigot on here would make it a bit tougher to clean out well after the fermentation of a batch of beer. But it could be done, sure.

BEST ANSWER: This arrived today and the box shows it as 304 food grade stainless steel "Water Dispenser"...
It is designed and marketed as a 3-5 gallon water jug to be inverted for a water dispenser!
While it can be used for Kombucha, it is not designed or sold as a Kombucha Fermenter..Company is out of Denver, Co.
It says it can brew a 2.5 gallon batch. What is the actual volume of the carafe?

BEST ANSWER: Thanks for contacting Northern Brewer. I understand you would like to know the volume of the carafe. The total volume is roughly 3 gallons, however you may want some head space for the SCOBY, so the maximum amount you can brew in this vessel is 2.5 gallons. Cheers! -Deanna, staff
