As good as all grain
I recently made a batch of all grain Hefeweizen and another batch with this DME. Most people who tasted them both did not have a preference. Of the 3 who expressed a preference, 2 preferred the DME. Not a scientific survey of course but I preferred the DME as well and much easier than all grain.

Briess Bavarian Wheat DME
I use a half pound of this DME with the 6 lb Bavarian Wheat LME for a starting gravity of 1.050 in My German style Weiss beers. Couple this with an authentic liquid German yeast strain for an excellent tasting wheat beer that is just as good as any all grain version without the 50% or greater wheat malt lautering issues.

Will continue to use this in my partial mash hefe.
Used 3.3 pounds of this in a recipe I came up with for a Bavarian hefeweizen and it tastes fantastic. I plan on getting more of this DME from NB sometime soon for a second batch. Fantastic stuff, y'all!

What is the percentage of wheat to barley in this product?
Aaron A on Jun 30, 2017
BEST ANSWER: 65% wheat to 35% barley. The info is on the Briess website.
How much should I purchase for a 2 gallon batch? All extract. I am doing my first extract batch.
A shopper on Dec 3, 2016
BEST ANSWER: I used 6 lbs for a 5 gal batch (that's 5 gallons of wort into the fermenter) and the original gravity was 1.051, which is right on the money for a Hefeweizen.

So I would say use 2.4 lbs for a 2 gallon batch.
Anyone use this in an IPA? I would like to add wheat to my IPA. any off flavors for the style?
Raymond B on Jun 28, 2017
BEST ANSWER: Yes it makes a nice white IPA. No off flavors. Some Bravarian yeast can give you flavors you may not be use to. Wheat beers make a nice summer
beer. Wether IPA, fruit, or traditional Barbarian white beer. Also nice for boosting ABV and base for bitter hop boil before adding liquid extract and 2nd hop addition.
Dose this DME still have enzymes to convert say un malted wheat??
A shopper on Nov 5, 2017
BEST ANSWER: To the best of my knowledge, DME and LME have no diastatic power.
